- Salad
- 1 green apple, sliced into matchsticks
- 1 cup of fennel, thinly sliced (1 bulb)
- cinnamon (as garnish)
- Dressing
- 1/2 cup extra virgin olive oil or macadamia
- nut oil
- 2 Tbsp apple cider vinegar
- 2 Tbsp fresh lemon juice
- 1/2 tsp fennel seeds, ground if possible
- 1/2 tsp cinnamon
- 1/4 tsp onion powder
- sea salt & black pepper to taste

- 1 T Vanilla
- 1 T Coconut Flour
- 3 Eggs
- 1/2 t Baking Soda, 1/2 t Baking Powder
- 1/2 t Salt
Chorizo Meatballs

1 Preheat oven to 425 degrees F
- 1 lb ground pork
- 2 Tbsp chorizo spice blend [see paleo spices]
- 1 Tbsp apple cider vinegar
Spicy Parsnip Wedges (paleo)

Put the wedges in a bowl, pour over the coconut oil and stir ’til they are well coated
- 3 large parsnips, peeled and cut into wedges
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 clove garlic, minced
- 1/2 tsp cumin
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- 3 tbsps coconut oil
Jerk Seasoning [Paleo]

Measure all of the spices into a medium bowl and mix with a fork until combined

- 1/2 cup salt
- 1/2 cup allspice
- 1/4 cup dried thyme leaves
- 5 tablespoons ground black pepper
- 2-3 tablespoons cayenne pepper
- 4 teaspoons ground cinnamon
- 4 teaspoons ground nutmeg

Dark Fudgey Paleo Brownies

- 1/4 c sunflower seed butter
- 1/2 c honey (raw)
- 4 oz unsweetened, 100% dark chocolate (I used Ghirardelli)
- 1 tbsp coconut oil
- 1/4 c unsweetened dutch process cocoa powder
- 3 large eggs
- 1 tbsp vanilla extract
- 1 tbsp coconut flour (sifted)
- 1 tsp baking soda, 1/2 tsp fine sea salt, sprinkling of mini chocolate chips (optional, but Enjoy Life brand are dairy, soy, and gluten free)
Spaghetti Squash & Turkey Casserole

- 2 lbs. ground turkey (I used 99% fat free, but you can choose your favorite)
- 1 medium sized spaghetti squash
- 1 medium sized purple onion (sliced)
- 1 garlic clove (minced)
- 1 bundle of kale (chopped)
- 1 egg – include yolk (beaten)
- 1/3 cup less-sodium chicken broth
- 1/3 coconut milk (carton)
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 tablespoon garlic and herbs Mrs. Dash spice
- 1/2 cup purified water
