- 1-1/2 pounds beef top round steak
- 2 tablespoons canola oil
- 1 cup chopped onion
- 1/4 cup reduced-sodium soy sauce
- 1 garlic clove, minced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon pepper
- 4 medium tomatoes, cut into wedges or 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 large green pepper, cut into strips (I use a red pepper)
- 1 tablespoon cornstarch
- 1/2 cup cold water
- Hot cooked noodles or rice
Bacon Wrapped Smoked Gouda Chicken Breasts

Combine, cayenne, garlic powder, paprika and pepper
- 4 boneless chicken breasts
- 4 slices bacon
- 3 -4 ounces smoked gouda cheese
- 1/4 teaspoon cayenne
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon pepper
Toffee Mocha Cupcakes

•Preheat oven to 350 degrees F
- Cupcakes:
- 2 tablespoons espresso powder
- 1 cup boiling water
- 1/2 cup butter-flavored shortening
- 1 1/4 cups sugar
- 2 eggs
- 1 3/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk chocolate toffee bits
- Espresso Buttercream Frosting:
- 1 cup (2 sticks) unsalted butter, at room temperature
- 2 1/2 cups powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons espresso powder
Chicken Piccata

Season the chicken with salt and pepper and sprinkle with 1 tablespoon flour
- 1 pound chicken scaloppini (about 4 ounces each)
- Kosher salt and freshly ground black pepper
- 1 tablespoon plus 1 teaspoon all-purpose flour, divided
- 3 teaspoons extra-virgin olive oil
- 2 garlic cloves, finely chopped
- 1/2 cup low-sodium chicken broth
- Finely grated zest and juice of 1 lemon, zest reserved for optional garnish, about 2 tablespoons juice
- 1 teaspoon white wine vinegar
- 2 tablespoons chopped fresh parsley, plus more for garnish
- 1 tablespoon capers, drained and rinsed
- 1 tablespoon unsalted butter
- Baby arugula for garnish
- Whole-wheat angel hair pasta or roasted potatoes, for serving

1.Bring a large pot of lightly salted water to a boil
- 12 ounces penne pasta
- 1/4 cup butter
- 2 tablespoons extra-virgin olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/2 pound portobello mushrooms, diced (Cremini or button mushrooms would work also)
- 1 pound medium shrimp, peeled and deveined
- 1 (15 ounce) jar Alfredo sauce
- 1/2 cup grated Romano cheese
- 1/2 cup cream
- 1 teaspoon cayenne pepper, or more to taste
- Salt and pepper to taste
- 1/4 cup chopped parsley

- 3/4 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 (8 ounce) carton sour cream
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup packed brown sugar
- 1/2 cup chopped pecans (I like toasted pecans)

- 1 cup sugar
- 2 tablespoons plus 2 teaspoons fresh lemon juice
- 1/4 teaspoon vanilla extract

- 4 large ripe peaches, peeled, pitted and coarsely chopped (about 2 pounds)
Caribbean Jerk Chicken Wings

In an airtight container or ziploc bag, shake together marinade and chicken wings until wings are entirely coated
- 1/2 cup Caribbean Jerk marinade
- 2 pounds of chicken wings
- 1 cup honey barbecue sauce (I used Sweet Baby Ray's)
