- MIX TOGETHER:
- 8 fresh peaches - peeled, pitted and sliced into thin wedges

Easy Chicken Cordon Bleu

The first thing you need to do is flatten out your chicken breasts

- 4 chicken breasts
- 4 slices of thick sliced Swiss cheese
- 4 slices of thick sliced black forest ham
- 2 eggs, beaten

Classic Baked Ziti

Preheat oven to 350 degrees F
- 1 lb lean ground beef
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 1 (32 ounce) jar meatless sauce
- 1 cup chicken broth
- 1 teaspoon dried oregano leaves
- 1 (16 ounce) package ziti pasta, cooked and drained
- shredded mozzarella cheese

- 3 cups all-purpose flour

- 1/2 teaspoon salt

- 1 1/2 cups white sugar
- 3 tablespoons margarine, melted
- 1 1/2 teaspoons vanilla extract

German Chocolate Brownies

- Brownies:
- 1 cup vegetable oil
- 2 cups sugar
- 2 teaspoons vanilla
- 4 eggs
- 1 cup all-purpose flour
- 2/3 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Frosting:
- 1 cup evaporated milk
- 1 cup sugar
- 3 egg yolks, slightly beaten
- 1/2 cup (1 stick) butter
- 1 teaspoon vanilla
- 1 3/4 cup shredded coconut
- 1 1/4 cup chopped pecans (I like toasted pecans)
- Drizzle:
- 1 cup chocolate chips, melted (optional)
Almond Roca

•Grease or oil a large rimmed baking sheet
- 1 cup (2 sticks) unsalted butter
- 1 C granulated sugar
- 1 Tbsp corn syrup (optional, but helps prevent crystallization)
- 1 C toasted almonds, finely chopped (toast by placing in a pan over medium heat for 5 minutes, stirring occasionally, or in the oven at 350 degrees F for 7-10 minutes, turning once halfway through. You may also buy roasted almonds.)
- 2 C dark chocolate chips (or milk chocolate)
Cranberry Mojitos

Just put cranberries, sugar, and water in a medium saucepan and bring to a simmer over medium heat
- 8 oz. fresh cranberries
- 1 C sugar
- 1 C water
- 20 mint leaves
- 2 T lime juice
- Ice
- 4 oz. rum
- 4-6 oz. soda water
Pizza Pasta Casserole

Add red or green peppers, mushrooms or whatever you like to this easy recipe
- 2 pounds ground beef (could use Italian sausage)
- 1 large onion, chopped
- 3-1/2 cups spaghetti sauce
- 1 package (16 ounces) spiral pasta, cooked and drained
- 4 cups (16 ounces) shredded part-skim mozzarella cheese
- 8 ounces sliced pepperoni (could use turkey pepperoni)
Reese's Peanut Butter Mini Cheesecakes

- 16 Reese's peanut butter cups, regular sized (and additional for topping if desired)
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1/4 cup sour cream
- 3/4 cup creamy peanut butter
- 1/4 cup semisweet chocolate chips
- 2 Tablespoons butter
- (optional) whipped cream
- (optional) additional chopped peanut butter cups
- (optional) sprinkles (preferably any sprinkle besides nonpareils)
