Grilled Turkey, Bacon & Swiss Sandwiches

Have leftover grilled turkey? Use it on a sandwich, along with bacon and swiss cheese to make a delicious meal!
- 8 slices bacon
- 3 tablespoons butter, softened
- 8 slices whole-grain bread
- 6 tablespoons finely chopped sun-dried tomatoes in oil
- 8 slices Swiss cheese (1-ounce)
- 12 ounce oven-roasted turkey breast slices
Soft Honey Oat Bread

This makes one 9 X 5 inch loaf
- 3 cups (381 grams) all-purpose flour
- 3/4 cup oats (I have used instant and old fashioned, both work great)
- 2 1/4 teaspoons instant yeast
- 1 1/2 teaspoons salt
- 1 cup (250 ml) milk (almond or soy milk for vegan/dairy free)
- 1/4 cup (62 ml) lukewarm water
- 2 tablespoons (28 grams) unsalted butter or margarine
- 1/4 cup honey (agave for vegan)
- 1 1/2 to 2 tablespoons honey (or agave), warmed
- 1 1/2 to 2 tablespoons oats
Chicken Burrito Dip

•Preheat oven to 350 degrees
- 2 cups shredded rotisserie chicken
- 1 cup cooked white rice (minute rice works great here)
- 1 (14.5 oz) can black beans, rinsed and drained
- 1 (10 oz) can Old El Paso mild enchilada sauce
- 1 cup corn kernels (from a can or frozen)
- 1/3 cup sliced green onions
- 2 teaspoons ground cumin
- 1/2 cup sour cream

- 1 package (16 oz) uncooked rotini pasta
- 2 tablespoons salad supreme seasoning
- 1 medium red bell pepper, chopped

- 1 package (3.5 oz) sliced pepperoni
- 8 oz fresh mozzarella ciliegini (cheese balls), drained, halved

Mexican Beef and Bean Stew

1. Combine the flour, salt and pepper in a large resealable plastic bag
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 pound beef stew meat, cut into 1-inch cubes
- 2 tablespoons canola oil
- 1 can (16 ounces) kidney beans, rinsed and drained (I like to use chili beans like Ranch Style beans, not drained)
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 2 medium potatoes, cubed
- 2 small carrots, sliced
- 2 celery ribs, sliced
- 1 small onion, chopped
- 2 cans (15 ounces each) tomato sauce
- 1 cup water
- 1 envelope taco seasoning
- 1/2 teaspoon ground cumin
- Tortilla chips and shredded cheddar cheese
- A can of green chiles would be a nice addition to the stew.
