  • 1 1/2 cups plus 6 tbs ( 3 3/4 sticks) unsalted butter
  • 3/4 cup plus 1 tbs light brown sugar
  • 2 large eggs
  • 3 2/3 cups all purpose flour
  • 2 tbs ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp salt
  • Granulated sugar for rolling



Step 1

1.In a electric mix master, beat butter and brown sugar until smooth. Then add one egg and mix to combine. Add flour,cinnamon and salt and beat to form a dough. Roll the dough to form two cylinders about 2 inches in diameter, wrap in plastic wrap and regfrigerate for at least 30 minutes or as long as 3 days.
2. Preheat oven to 325. Line baking sheets with parchment paper
3. Beat remaining egg in a bowl. Pour about 1/4 inch of granulated sugar in a shallow dish that fits the cylinder. Brush outside of log with the beaten egg,then roll the log in the granulated sugar to coat it. Slice 1/4 inch coins of cookie dough and arrange them 2 inches apart on cookie sheet
3. Bake until lightly brown around edges and firm about 15 minutes. Let cool on baking sheets
4. Place in container with waxed paper between layers
