Split Pea Soup

1.Rinse ham hocks. Place them in a stockpot or dutch oven along with remaining ingredients
- 2 ham hocks(about 1 1/2 pounds)
- 1 pound green split peas
- 2 carrots chopped
- 2 celery stalks chopped
- 1 large yellow onion, chopped
- 2 cloves garlic, finely chopped
- 2 32oz containers chicken broth
- 1 bay leaf
- 1 tbsp fesh thyme leaves or 1 tsp dried thyme
Roast Fresh Ham with Cider Glaze

Rinse the ham and pat dry
- One 12- to 14-pound fresh ham, bone in and skin on
- 1 cup chopped flat-leaf parsley leaves
- 12 fresh sage leaves, chopped
- 6 large cloves garlic, peeled and chopped
- 1/4 cup whole-grain mustard
- 1/2 teaspoon red pepper flakes
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- 2 large Spanish onions, trimmed and cut into 1-inch wedges
- 1 gallon apple cider
Chocolate Buttercream Icing

1. In a food processor, pulse the sugar until powdery
- 1 cup sugar
- 3 large egg whites
- 1/4 tsp salt
- 1/2 tsp pure vanilla extract
- 2 sticks plus 2 tbsp unsalted,cut into tablespoons, room temperature
- 4 oz extra bittersweet chocolate, melted and cooled

Hidden Valley Ranch 7-Layer Dip is filled with the ranch dressing flavor you crave
- 1 (16-ounce) can Refried Beans
- 1 cup sour cream
- 1 (1-ounce) package Hidden Valley Ranch Original Ranch Salad Dressing Mix
- 1 cup diced tomatoes
- 1 (4-ounce) can green chilies, drained and chopped
- 1 (2.25-ounce) can sliced black olives, drained
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded Monterey cheese
Cinnamon Sugar Cookies

1. Make Dough- In a large bowl, whisk together flour, baking powder,salt and cinnamon, set aside
- 2 cups all purpose flour( spooned and leveled) plus more for rolling
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1 stick unsalted butter, room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- Decorating sugar and candies ( optional)
- Confectioner's Sugar for decorating (optional)
Mom's Macaroni and Cheese

1. Preheat oven to 400.Cook Macaroni per directions until al dente, drain thoroughly, set aside 2
- 1 pound Catanisella Lunga Pasta or Elbow macaroni(2 1/2 cups)
- 1 pound velveeta cheese, cut into cubes
- 1/4 cup butter
- 1/4 cup flour
- 2 1/4 cup milk
- 1 tsp kosher salt
- dash black pepper
- Paprika for dusting top of casserole
Brown Butter Sage Sauce

1. melt butter in a medium sauce pan over low medium heat
- 1 stick unsalted butter
- 2 cloves garlic, crushed
- 1/2 tsp kosher salt
- table grind pepper to taste
- 1/4 cup coarsely chopped sage leaves
Clams Posilipo

Heat oil in heavy large skillet over medium heat
- 1/4 cup olive oil
- 6 garlic cloves , minced
- 1/2 cup canned crushed tomatoes with added puree
- 1/2 cup bottled clam juice
- 1 tsp dried oregano, crumbled
- 3 dozen littelneck clams, scrubbed
- Minced fresh parsley
- Note: Recipe can be doubled . I used this recipe as an appetizer
Roasted Cauliflower with Parmesan Cheese

- 1 medium head cauliflower, trimmed and cut into florets
- 3 large cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon kosher salt

- 1/2 cup all-purpose flour

- 4 garlic cloves, minced

- 1/4 cup heavy cream
- 1 to 1 1/2 tablespoons fresh lemon juice
- 2 tablespoons capers, rinsed
- 2 tablespoons chopped fresh flat-leaf parsley
