Nutty Sandwich Cookies

1. Preheart the oven to 325
- 3/4 cup pistachios, almonds, pecans or hazelnuts, plus more for topping ( optional)
- 1/2 cup confectioner's sugar
- 1/4 cup granulated sugar
- 1 cup all purpose flour
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 stick unsalted butter, at room temperature
- Coarse, raw, sanding or brown sugar for topping( optional)
- Jam, lemon curd, chocolate-hazelnut spread, mleted chocolate for filling
Berry Coffee Cake

1.preheat the oven to 350 degrees F 2
- Coffee Cake
- 2 cups all purpose Flour plus a bit more to coat pan
- 1 cup 1/4 cup granulated sugar1 tsp salt
- 10 tbsp butter, softened, cut into pieces
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup buttermilk, room temp
- 1 egg
- 1 tsp vanilla
- 1 tsp almond extract
- 1/2 cup blueberries
- 1/4 cup blackberries
- 1/4 cup raspberries
- 2/3 cup brown sugar
- 2 tsp ground cinnamon
- Glaze
- 1 cup confectioner's sugar
- 1 tbsp milk
Chicken Parmesan Meatballs

1.Preheat oven to 350°F. Line a baking sheet with parchment paper
- 6 ounces roasted garlic chicken sausage, removed from casings, crumbled
- 8 ounces ground chicken
- 3/4 cup Italian breadcrumbs
- 1 cup fresh grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1-1/2 tsp dried Italian seasoning
- 1/2 tsp crushed red pepper
- 1/4 cup dried parsley, crumbled or 2 tbsp fresh parsley, chopped
- 1/2 tsp kosher salt
- 1/2 tsp fresh cracked black pepper
- 1 large egg, lightly beaten
- 1 cup marinara sauce
- 1 cup fresh mozzarella, sliced into small thin slices
White Clam Sauce

1.Drain clams, heat olive oil inlarge skillet, add garlic , cook til fragrant

- 1 cup extra virgin olive oil
- 6-8 clove of garlic minced
- 2 tbs chopped fresh parsley

- 1/3 cup tarragon or white wine vinegar
- 1/4 cup sugar
- 3 tbsp. olive oil
- 3 tbsp. Dijon mustard( I prefer coarse grain)
- 2 tbsp. chopped fresh parsley
- 1 1/4 tsp. kosher salt
- 2 cans (15 1/4-19 oz.) Red Kidney Beans, rinsed and drained
- 1 can (16-19oz) White ( Cannellini) Beans, rinsed and drained

- 1/2 pound butter ( 2 sticks unsalted butter at room temperature)
- 1 1/2 cups sugar
- 4 eggs separated, at room temperature
- 2 cups Cake flour ( Presto is one type of cake flour)
- 1 lemon rind from one lemon
- 1/2 cup milk
- Confectionary Sugar for dusting

- 2 tbsp dry sherry
- 2 tsp minced peeled fresh ginger
- 3 1/2 tsp cornstarch
- Kosher salt to taste
- 1/2 cup low sodium chicken broth
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tsp sugar
- 1 tbsp plus 2 tsp vegetable oil
- 2 garlic cloves,chopped
- 2/3 cup unsalted cashews,toasted
- 2 scallions,white and green parts separated and thinly sliced
- cooked white rice for serving
