Tilapia Piccata

Preheat the oven to the lowest setting
- 4 tilapia or other sustainable flaky white fish fillets (about 1 3/4 lbs. total)
- Salt and pepper
- 1 cup flour, for dredging
- 4 tablespoons EVOO
- 4 tablespoons butter
- 2 lemons--1 sliced, 1 juiced (about 3 tbsp.)
- 1 large shallot, finely chopped
- 2 large cloves garlic, finely chopped
- 1/2 cup dry white wine or dry vermouth
- 2 tablespoons capers, drained
- A handful flat-leaf parsley, chopped (about 2 tbsp.)
Shredded Chicken

Emeril Lagasse's method for shredded chicken! Yum! We like it best served as nachos
- 3T3 T Olive Oil
- 2lb.2 lb. boneless skinless chicken breast diced into 3-inch strips
- 4tsp4 tsp chili powder
- 1tsp1 tsp salt
- 2cups2 cups thinly sliced onions
- 1T1 T minced garlic
- 2cups2 cups chicken stock
- 2tsp2 tsp freshly squeezed lime juice
Mighty Migas

1. In a large nonstick skillet, heat the oil over medium-high heat
- 1/4 cup vegetable or corn oil
- 6 corn tortillas, chopped into bite-size pieces
- Salt and pepper
- 1 small onion, chopped
- 1 large jalapeno chile pepper, chopped or thinly sliced
- 2 cloves garlic, finely chopped
- A handful cilantro, chopped
- 2 tomatoes, seeded and finely chopped
- 12 eggs, beaten
- 1 tablespoon hot sauce, or to taste
- 2 cups shredded monterey jack
- 1 avocado, diced and sprinkled with fresh lime or lemon juice, for garnishing
Southern-Style Cobb Salad

1. Stir together brown sugar and seasoned salt
- 1/4 cup firmly packed dark brown sugar
- 1/2 teaspoon seasoned salt
- 1/2 pound bacon slices
- 12 cups coarsely chopped iceberg or romaine lettuce
- 1 (15 1/2-oz.) can black-eyed peas, rinsed, drained, and chilled
- 1 (11-oz.) can whole kernel corn, rinsed, drained, and chilled
- 2 medium tomatoes, chopped
- 1 cup (4 oz.) shredded Cheddar cheese
- Pecan-Crusted Chicken, sliced
- 1 cup Ranch dressing
Swiss Burgers in Tomato Gravy

1. Preheat oven to 425°
- 8 red potatoes, cut into 4 wedges each
- 2 tablespoons olive oil
- 1 1/2 teaspoons kosher salt, divided
- 1 1/2 pounds ground sirloin
- 1 large egg, lightly beaten
- 1/2 teaspoon ground black pepper
- 1 medium-size white onion, sliced
- 2 (15-oz.) cans fire-roasted diced tomatoes
- 1 chicken bouillon cube
- 6 (1-oz.) Swiss cheese slices
- Chopped fresh basil (optional)
Bland Dog Food

- 80 % potatoes
- 10 % chicken or turkey
- 10 % green beans, peas or carrots
- do not use chicken or turkey broth - too much salt!
Pasta Salad with Mayo

Cook and drain pasta. Mix mayo, parsley, cheese, lemon juice, garlic and basil
- 16 oz. Rotelli Pasta
- 1 1/2 cups mayo
- 2/3 cup chopped fresh parsley
- 1/3 cup grated Parmesan cheese
- 2/3 Tbs. lemon juice
- 2 tsp. minced garlic
- 2 tsp. dried basil, crushed
- 2 2/3 cups red kidney beans drained (2 cans)
- 2 cups snow pea pods
- 2 cups carrots cut into 1/2" strips
Tostachos

In a small skillet, heat a thin layer of oil over medium-high
- Corn or vegetable oil, for frying and drizzling
- 4 6-inch corn tortillas Salt and pepper
- 3/4 cup ground beef chuck
- 1 small onion, finely chopped
- 2 jalapenos, seeded and finely chopped
- 2 cloves garlic, finely chopped
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon tomato paste
- 1/4 cup beef stock
- 2 plum tomatoes, seeded and finely chopped
- A small handful cilantro, finely chopped
- 1 1/2 tablespoons butter
- 1 tablespoon flour
- 2/3- 3/4 cup milk
- 1 1/2 cups shredded yellow cheddar
- 1/4 cup pickled jalapeno slices, drained
- Sour cream, for garnishing
Banana Fritters

- 1 cup flour
- 2 tablespoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons brown sugar
- 1/2 cup half-and-half
- 1 beaten egg
- 3 mashed bananas
- vegetable oil
- granulated sugar
Five Cheese Artichoke and Crap Dip

1. Bring ½ pot of water to boil in 4 qt
- 8 oz. Phillips Crab Meat
- 4 large artichokes
- 4 oz. cream cheese
- 1/4 c. Monterey Jack cheese, shredded
- 2 Tbsp. Romano cheese, shredded
- 2 Tbsp. Parmesan cheese, shredded
- 1/4 c. mozzarella cheese, shredded
- 1/4 c. mayonnaise
- 2 Tbsp. white wine
- 1/4 tsp. Phillips Seafood Seasoning
- optional: pinch each white, red and black pepper
