  • 1 small zucchini, cut into 1 1/2-inch pieces
  • 1 small summer squash, cut into 1 1/2-inch pieces
  • 1 red bell pepper, cut into 1 1/2-inch pieces
  • 3/4 cup mayonnaise
  • 2 tablespoons white wine vinegar
  • 1 garlic clove, pressed
  • 1 1/2 teaspoons coarsely ground black pepper
  • 1 1/2 teaspoons spicy brown mustard
  • 1 teaspoon prepared horseradish
  • 1/2 teaspoon sugar
  • 1/2 teaspoon table salt
  • Preparation
  • Stir together mayonnaise, vinegar, garlic, black pepper, spicy brown mustard, horseradish, sugar, and salt. Refrigerate up to 1 week.
