Béarnaise Sauce Recipe

Fill a medium saucepan with 1 inch of water and bring it to a bare simmer over low heat
- 1/3 cup champagne or white wine vinegar
- 1/3 cup dry white wine
- 1/3 cup finely chopped shallot (from about 1 medium)
- 5 fresh tarragon sprigs, leaves removed and finely chopped (about 1 tablespoon), stems reserved
- 6 whole black peppercorns, crushed
- 3 large egg yolks
- 8 tablespoons unsalted butter (1 stick), cut into 8 pieces, at room temperature
- 1 to 2 teaspoons finely chopped fresh chervil (optional)
- Kosher salt
- Freshly ground black pepper

- 2 egg whites at room temperature
- 1 cup sugar

Caramel Pecan Delight

1.In a bowl, combine cookie crumbs and butter
- 1 (16 ounce) package pecan cookies, crushed
- 1/2 cup butter or margarine, melted
- 2 (8 ounce) packages cream cheese, softened

- 1 1/2 cups cold milk

Grilled Alaska Halibut Tacos with Cucumber Citrus Salsa

For halibut: Preheat medium-hot grill, broiler oven or pan on stovetop over medium-high heat

- 1 1/2 tablespoons Thai sweet chili sauce
- 1 teaspoon cornstarch
- 1 teaspoon curry powder
- 4 slices white toast
- 1/3 cup vegetable oil

Old-Fashioned Meatball Stew

Mix eggs with dried onion, bread crumbs, Worcester sauce, and salt and pepper
- 2 tablespoons minced dried onion
- 1/2 cup fine dry bread crumbs, plain or seasoned
- 1 teaspoon Worcestershire sauce
- 2 eggs, lightly beaten
- salt and pepper, about 1/4 tsp. each, or to taste
- 1 1/2 to 2 lbs ground beef
- 2 tablespoons vegetable oil
- 4 to 5 medium red potatoes, peeled and cubed
- 1 or 2 carrots, sliced about 1/2-inch thick
- 2 ribs celery, chopped, or 1 1/2 tablespoons dried celery flakes
- 1 medium onion, chopped coarsely
- 1 can (10oz) cream of mushroom soup (can use Healthy Request or other low-fat)
- 1 can (10oz) tomato soup
Rum Balls

- 1 Box Vanilla wafers
- 1 cup pecans
- 1 1/4 Cup Icing Sugar (or substitute 1 1/4 cup sugar + 1/4 tsp cornstarch – put in blender and blend on high speed for 60 seconds)
- 2 Tbsp brown sugar
- couple dashes of cinnamon, couple dashes of nutmeg
- 1/2 Cup Spiced Rum (or whatever liquor you want)
- 2 Tbsp white corn syrup (Karo syrup)
