Peach Cheesecake

One of Mom's Favs!! This pie makes its own crust when baking
- CRUST :
- 3/4 c flour
- 1 t baking powder
- 1 vanilla pudding
- 1/2 c milk
- 1 egg
- 1/2 t salt
- 3 T butter
- 15 oz. can sliced peaches (drain and reserve juice)
- NOTE: If you're using fresh peaches, cut them up and sugar them before using in pie. About 2 cups of sliced peaches are needed. Let them sit for a while to form the juice, then drain and reserve the juice.
- FILLING:
- 2 8 oz. cream cheese
- 2 T juice from peaches
- 1 c sugar.
- TOPPING:
- 1 T sugar
- 1/2 t cinnamon
Cheesy Shells and Greens Recipe

1.Cook the pasta according to the package directions
- 12 oz medium pasta shells
- 1 Tbsp unsalted butter
- 2 Tbsp all-purpose flour
- 1 1/4 cups whole milk
- 1 Tbsp Dijon mustard
- 1/2 tsp freshly grated or ground nutmeg
- Pinch cayenne (optional)
- 6 oz extra-sharp Cheddar, grated (1 1/2 cups)
- Kosher salt and pepper
- 1 bunch spinach, thick stems discarded, leaves roughly chopped
Pumpernickel Sausage Stuffing

Preheat the oven to 350 degrees
- 4 tablespoons unsalted butter
- 1 pound sweet Italian sausage (casings removed), meat chopped
- 2 large celery ribs with leaves, chopped
- 1 large onion, chopped
- 1 loaf of pumpernickel raisin bread (1 pound), cut into 1-inch cubes and dried (leave out overnight or lightly toast in a 200 degrees oven)
- 1 sleeve saltine crackers (4 ounces), crumbled
- 1 tablespoon fresh thyme, chopped
- 4 eggs, lightly beaten
- 2 cups turkey stock or canned low-sodium chicken broth
- 1/4 cup chopped flat-leaf parsley
- Kosher salt and freshly ground pepper
