- 9 egg yolks
- 6 tablespoons sour cream
- 1/2 teaspoon baking powder
- 2 drops vinegar
- Dash of salt
- 1 teaspoon vanilla
- 3 cups flour (sifted)
- 3 tablespoons sugar
- Powdered sugar
Irish Toast

- 1 (16 ounce) loaf French bread
- 4 large eggs
- 1 fluid ounce Irish whiskey
- 1 1/2 fluid ounces Irish cream liqueur
- 1 teaspoon vanilla extract

Rice and Ham Croquettes with Tomato Sauce

1. Preheat oven to 225°
- 3 cups cooked long-grain rice
- 1 1/2 cups finely diced country ham or prosciutto (about 6 oz.)
- 1/2 cup finely chopped green onions, white and light green parts only
- 1 (3-oz.) package cream cheese, softened to room temperature
- 2 large eggs
- 2 tablespoons milk
- 1 1/4 cups panko (Japanese breadcrumbs)
- Vegetable oil
- Tomato Sauce, warm
Fried Ravioli

Store bought cheese Raviolis are breaded and fried to a golden brown for dipping in a warm marinara sauce
- Olive oil, for frying
- 1 cup buttermilk
- 2 cups Italian-style bread crumbs
- 1 box store-bought cheese ravioli (about 24 ravioli)
- 1/4 cup Parmesan, freshly grated
- 1 jar store bought marinara sauce, heated, for dipping
Super Sunday Sauce

Place a mesh sieve over a bowl
- 1 28 ounce can crushed tomatoes
- 1 28 ounce can whole peeled Italian tomatoes (with liquid), crushed with your hands
- 5 tablespoons EVOO
- 1 pound pork ribs or neck bones with meat
- 1 small onion, minced
- 2 cloves garlic, minced
- 1 pound Italian pork sausage links
- 1 pound homemade or store-bought meatballs
- 1 large sprig basil, leaves and stems intact
- Salt and pepper

New Tuna Casserole

- 1 (16-oz.) package ziti pasta
- 1 (8-oz.) package haricots verts (thin green beans), cut into 1-inch pieces
- 6 tablespoons butter, divided
- 2 medium leeks, thinly sliced
- 2 (4-oz.) packages fresh gourmet mushroom blend
- 1/4 cup all-purpose flour
- 3 cups heavy cream
- 1 cup organic vegetable broth
- 2 cups (8 oz.) shredded sharp white Cheddar cheese
- 6 tablespoons grated Parmesan cheese, divided
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 (12-oz.) can solid white tuna in spring water, drained
- 2 tablespoons chopped fresh chives
- 1 tablespoon chopped fresh tarragon or parsley
