- 1 tablespoon Cranberry Reduction
- 1 1/2 teaspoons fresh lemon juice
- Ice cubes
- Garnish: lemon rind twist
Chicken Fricasse

Heat oil in a sauce pan over medium-high until shimmering
- 2 tbs oil
- 4 bone in chicken breast
- 2 tbs unsalted butter
- 1 lb cremona mushrooms, quartered
- 1/4 cup minced shallots
- 1 tbs minced fresh garlic
- 1/4 cup flour
- 1 tbs tomato past
- 1/2 cup chicken broth
- 1/2 cup dry white wine
- 4 carrots cut into 1-2 inch pieces (microwave 30 seconds or so to soften)
- 4 celery ribs, cut into 1-2 inch pieces
- 3-4 springs fresh thyme
- 1 bay leaf
Pumpkin Spice Cake

Combine first 4 ingredients in a large bowl
- Cream Cheese Frosting:
- 4 large eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 (15 oz can) pumpkin puree
- 2 cups flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ginger
- 1/4 tsp ground cloves
- 1 (3 oz) pkg cream cheese, softened
- 1/3 cup butter, softened
- 1 tsp vanilla
- 2 cups powdered sugar
- 1/2 cup chopped walnuts, toasted
Hot Fudge Sauce

Combine heavy cream and corn syrup in a medium saucepan and place over medium heat
- 1 cup heavy cream
- 1/2 cup light corn syrup
- 12 oz semi sweet chocolate (2 cups)

Whisk together the lemon juice, olive oil, Greek seasoning and lemon zest in a bowl
- 2/3 cup lemon juice
- 2/3 cup extra-virgin olive oil
- 3 tbs Greek seasoning
- 4 tsp lemon zest
- 6 chicken breast halves
- 2 pkg crumbled feta cheese
- 1 jar sun-dried tomatoes
- 1 larger can of chopped olives
- 2 tbs oil from the sun-dried tomatoes
- 6 strips roasted red pepper

- 3 tbs lemon juice
- 1 tbs soy sauce
- 1 tbs Worcestershire sauce
- 2 tsp vegetable oil
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 3/4 pound boneless skinless chicken breasts, cut into 1/2-inch strips
- 1 small onion, sliced and separated into rings
- 1/2 each medium green, sweet red and yellow pepper, jUlienned
- 4 flour tortillas (6 inches), warmed
- Shredded cheddar cheese, optional
