Southern Italian Chicken Soup

1. Saute first 4 ingredients in 2 tbs hot oil in a large Dutch oven, 3-5 minutes
- 1 large onion, diced
- 1 celery rib, thinly sliced
- 2 carrots, chopped
- 1 garlic clove, minced
- 3 tbs olive oil, divided
- 6 cups chicken broth
- 1 (15 oz) can diced tomatoes
- 1 tsp dried Italian seasoning
- 1/4 tsp dried crushed red pepper
- 4 (6-8 oz) skinned and boned chicken breasts
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups sliced fresh okra
- 1 (15 oz) can black-eyed peas, drained and rinsed
- 1 (9 oz) pkg refrigerated cheese filled tortellini
- Parmesan cheese
Noodles with Cabbage and Onions (Michael Symon)

In a very large pot, bring 5 quarts water and 3 tablespoons salt to a boil
- 1/2 pound fresh tagliatelle pasta
- 2 tablespoons olive oil
- 1/2 head cabbage (cored, thinly sliced)
- 1 yellow onion (peeled, thinly sliced)
- 4 tablespoons unsalted butter (divided, cut into pats)
- 1 teaspoon smoked paprika
- 1/2 cup flat-leaf parsley (roughly chopped)
- Kosher salt and freshly ground pepper (to taste)

In a small bowl, cream butter and confectioners' sugar until light and fluffy
- 1 cup butter, softened
- 1 cup confectioners' sugar
- 1 egg
- 1-1/2 tsp rum extract
- 2-1/2 cups all-purpose flour
- 1/4 tsp salt
- Colored sugar
Cherries & Cream Roll

Put waxed paper in a jelly roll pan
- 1 cup cake flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 eggs
- 3/4 cup sugar
- 1 tbs frozen orange juice concentrate, thawed
- 2 tbs water
- 1 (21 oz can) cherry pie filling
- 1 large cool whip
- 1/2 cup powdered sugar
Chocolate Party Cake

In a large mixing bowl, combine the first six ingredients; beat on low speed for 30 seconds
- Mocha Rum Icing:
- 1 pkg (18 1/4 oz) devil's food cake mix
- 1 pkg (3.4 oz)) cook-and- serve chocolate pudding mix
- 1 envelope whipped topping mix
- 1 cup water
- 1/4 cup vegetable oil
- 4 eggs
- 2 tbs butter, softened
- 2 cups confectioners' sugar
- 1/3 cup baking cocoa
- 2 tbs refrigerated nondairy creamer
- 1/2 tsp rum extract
- 2 to 3 tbs brewed coffee
- Chopped pecans, optional
Spaghetti Picnic Salad

Break spaghetti into small pieces and cook in salted water
- 1 lb box thin spaghetti
- 1 onion, chopped
- 1 green pepper, chopped
- 1 pkg sliced fresh mushrooms
- 1 bottle McCormick Salad Supreme
- 1 bottle (8 oz) Italian dressing
Sauce & Meatball recipe:

Meatballs: Mix together ground beef, bread crumbs, egg, milk, salt, pepper, oregano, parsley and basil
- Meatballs:
- 2 lbs. very lean ground beef
- 1 cup Italian bread crumbs
- 1 egg
- 1/2 milk
- salt
- pepper
- oregano
- parsley
- basil ( to taste)
- Sauce:
- 4 large cans of Hunts Tomato Sauce
- 1 sm. can of Hunts Paste
- garlic (2/3 cloves)
- celery stalks (4-5)
- large carrots (4-5)
- bunch of fresh parsley
- bunch of basil
- salt
- pepper
Rustic Italian Bread (New 2017)

In a bowl, add 1 cup of warm water and dry active yeast and let it stand until creamy (about 5 minutes)
- 2 cups of lukewarm water (you may not use all of it)
- 3 cups all-purpose flour, or (you can use Farina Tipo 00, Oat flour blend, or Wheat flour)
- 2 teaspoons granulated sugar
- 1 teaspoon salt
- 2 1/2 teaspoons of active dry yeast or a packet
- 1 Tablespoon of Olive Oil
- 1 Tablespoon of Sesame Seeds (optional for the top)
Baileys Marble Cheesecake

Crust: Combine butter and chocolate wafer crumbs
- Crust:
- 1/4 cup butter, melted
- 1 1/2 cups chocolate wafer crumbs
- Filling:
- 3 (8 oz pkgs) cream cheese, softened
- 3/4 cup sugar
- 3 eggs
- 2 cups sour cream
- 1/4 cup Bailey's Irish Cream Liqueur
- 1 tsp vanilla
- 6 squares semi-sweet chocolate, melted
- Topping:
- 5 squares semi sweet chocolate
- 1/2 cup whipping cream
- 2 tbs butter
- 1/2 tsp vanilla
Oatmeal Scones with Maple Cream

Preheat oven to 450°. Line a baking sheet with parchment paper
- 2 cups flour
- 1 cup rolled oats
- 1/3 cup brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup heavy cream
- 1/4 cup milk
- 1 tsp vanilla
- 1 stick cold unsalted butter, cubed
- 2 tbs cold shortening, cubed
- 1/2 cup chopped pecans, toasted
- Maple Cream
- 2 tbs pure maple syrup
- 1 tbs heavy cream
- 1/2 cup powdered sugar
