Roasted Chicken & Red Potatoes Recipe

Preheat oven to 375°. Place potatoes, spinach and onion in a greased shallow roasting pan
- 2 pounds red potatoes, cut into 1-inch pieces
- 1 package (9 ounces) fresh spinach
- 1 large onion, cut into 1-inch pieces
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon salt, divided
- 1 teaspoon dried thyme
- 3/4 teaspoon pepper, divided
- 6 chicken leg quarters
- 3/4 teaspoon paprika
Grilled Chicken Veggie Pasta Salad (Yummly)

Cook pasta according to package directions; drain and rinse with cold water until completely cool
- 8 oz whole grain penne pasta
- 1/4 cup mayonnaise
- 2 tbs Italian Dressing
- 8 ounces asparagus, trimmed
- 1 large sweet on, thickly sliced into rounds
- 1 medium zucchini, sliced lengthwise into thirds
- 1 large bell pepper, quartered
- 1/4 cup loosely packed fresh basil leaves, thinly sliced
- 1 lb boneless skinless chicken breast halves
Pork Loin with Potatoes

Cut slits in top of roast; insert garlic slices
- 1 bone-in pork loin roast (5 pounds)
- 3 garlic cloves, sliced
- 3 tbs olive oil
- 1/4 tsp paprika
- 1/4 tsp pepper

- 6 medium potatoes, peeled
- 1/2 tsp salt

- 1 cup water
- 1 cup beef broth
- 2 medium onions, sliced

- 1/4 cup all-purpose flour

- 1 lb green beans
- 1 tbs baking soda

Preheat oven to 400°. On a lightly floured surface, unroll pastry sheets
- 1 package (14.1 ounces) refrigerated pie pastry
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup confectioners' sugar
- 1/4 teaspoon almond extract
- 2 cups fresh blueberries
- 2 cups fresh raspberries
- 1/4 cup sliced almonds, toasted
- Additional confectioners' sugar, optional

Preheat oven 350°. Grease and flour 12 inch Bundt pan
- Cake:
- 1 pkg (18.25 pkg) chocolate cake mix
- 1 pkg (3.4 oz) chocolate instant pudding and pie filling mix
- 1 cup milk
- 1/2 cup sour cream
- 4 large eggs
- 1 cup chopped walnuts
- 2 cups (12 oz pkg) semi-sweet chocolate morsels
- Glaze:
- 1 bar (2 oz) Unsweetened Chocolate Baking Bars
- 1 1/2 cups powdered sugar
- 3 tbs butter
- 2-3 tbs water
- 1 tsp vanilla

- 3/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup mashed overripe bananas (about 2)
- 1/4 cup buttermilk
- 1/4 cup sugar
- 4 tbs unsalted butter, melted
- egg
- 1/2 tsp vanilla
- sliced bananas

- 2 lbs ground meat (meatloaf mix plus ground sirloin to equal 2 lbs)
- 1 1/2 cup bread crumbs
- 1 (8oz) can tomato sauce
- 2 eggs
- 1/8 cup dried parsley

- 1-1/2 cups uncooked medium pasta shells
- 1 medium onion. chopped
- 1 large portobello mushroom, chopped
- 2 garlic sliced
- 1 tsp olive oil
- 1 tbs. all-purpose flour
- 1 cup fat-free milk
- 1/2 cup reduced-sodium chicken broth
- 2 -1/2 cups, cubed, cooked chicken breast
- 1 pkg:(10 oz) chopped spinach, thawed and squeezed dry
- 6 tbs shreddedParmesan cheese, divided
- 1 tsp lemon juice
- 1/4 tsp pepper
- 1/4 tsp. crushed red pepper flakes
