  • 1/4 tsp salt
  • 2 eggs, beaten
  • 1 cup buttermilk (1 tbsp vinegar in measuring cup and then add milk to make 1 cup)
  • 1/4 lb butter, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups diced rhubarb (skin on)
  • 1 cup dark chocolate chips
  • Dark chocolate chips to sprinkle on top of muffins
