Rhubarb Dark Chocolate Chip Muffins

Mix dry ingredients together in a large bowl
- 2 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup brown sugar
- 2/3 cup white sugar
- 1/4 tsp salt
- 2 eggs, beaten
- 1 cup buttermilk (1 tbsp vinegar in measuring cup and then add milk to make 1 cup)
- 1/4 lb butter, melted
- 1 tsp vanilla extract
- 1 1/2 cups diced rhubarb (skin on)
- 1 cup dark chocolate chips
- Dark chocolate chips to sprinkle on top of muffins
Ultimate Chocolate Chip Cookies

Beat butter and sugars at medium speed with an electric mixer until creamy
- 3/4 cup butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla
- 2 1/4 cups plus 2 tbs flour
- 1 tsp baking soda
- 3/4 tsp salt
- 1 (12 oz pkg) semisweet chocolate morsels
Herbed Pork and Potatoes

In a small bowl, combine the first eight ingredients
- 1/2 cup olive oil
- 3 tsp minced fresh thyme or 1 teaspoon dried thyme
- 2 tsp minced garlic
- 2 tsp dried minced onion
- 2 tsp minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
- 1 tsp seasoned salt
- 1 tsp coarsely ground pepper
- 1 tsp ground mustard
- 2 pork tenderloins (1 pound each)
- 1 pound small red potatoes, quartered
Brussels Sprouts Salad with Maple-lemon vinaigrette

Shred Brussel sprouts in a food processor using the slicing blade
- 1 1/2 lb Brussel sprouts, trimmed
- 1 cup finely diced onions
- 1/2 tsp ground ginger
- 3 tbs olive oil
- 1/4 cup pure maple syrup
- 1/4 cup fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 cup chopped walnuts, toasted
- salt
- pepper
Gluten Free Oatmeal Cookies

Heat oven to 350°. Combine flour, baking soda, cinnamon and salt
- 1 1/2 cups gluten free flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup ( 1stick) plus 6 tbs butter, softened
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 3 cups gluten free oatmeal
- 1 cup raisins

- 3 red skinned potatoes, sliced 1/8 inch thick (1 lb)

- 3 cups warm water (105°F to 115°F)
- 3 tbs sugar
- 3 envelopes dry yeast
- 1/2 cup olive oil
- 5 tsp salt
- 9 cups (or more) all purpose flour
