Beef with Red Wine Sauce

Place first 3 ingredients in a 6-quart slow cooker
- 3 pounds boneless beef chuck roast, cut into 1-inch pieces
- 1 medium onion, sliced
- 1 lb fresh mushrooms, halved
- 1 (1.61-ounce) package brown gravy mix
- 1 (10 1/2-ounce) can beef broth
- 1 cup red wine
- 2 tbs tomato paste
- 1 bay leaf
- Hot cooked egg noodles or rice
- Garnish: chopped fresh parsley
Baba Vi's Blackeyed Peas

Cook blackeye peas about 25-30 minutes
- 1 pkg Picsweet Blackeyed Peas
- fresh parsley
- 3 cloves garlic, minced
- 2-3 tsp lemon juice
- salt and pepper to taste
- Good Seasonings dressing
- 2 tbs red bell pepper
- 1/2 -3/4 cup sweet onion, chopped
- dill weed
- 2 tbs sugar
- balsamic vinegar, dash
Devil's Food Cupcakes with Chocolaty Frosting Recipe

Preheat oven to 350°. Line 24 muffin cups with paper liners
- FROSTING:
- 1 ounce unsweetened chocolate, chopped
- 1 cup hot strong brewed coffee
- 1-3/4 cups sugar
- 2/3 cup canola oil
- 1 egg
- 2 cups all-purpose flour
- 1/2 cup baking cocoa
- 3 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 cups (12 ounces) semisweet chocolate chips
- 1-1/2 cups heavy whipping cream
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- Optional decorations: gumdrops, regular or Dum Dums lollipops and semisweet or mini chocolate chips
Peanut Butter Cookies

Combine flour, soda and salt
- 1 1/2 cup flour
- 1 tsp baking soda
- dash of salt
- 1/2 cup shortening
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 tsp vanilla
- 1/2 cup peanut butter
- 1 egg, beaten
Peppered Rib Roast

Combine the pepper and cardamom; rub over roast
- 1/4 cup ground pepper
- 1/2 tsp ground cardamom
- 1 boneless beef rib eye (5-6 lbs)
- 1 cup soy sauce
- 3/4 cup red wine vinegar
- 1 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1 1/2 tsp cornstarch
- 1/4 cup cold water
Beef Tip Stroganoff

Sear beef in butter, then remove
- Horseradish Sour Cream:
- 3 tbs unsalted butter, divided
- 1 lb. beef tenderloin tips
- 3 cups whole cremini or button mushroom caps
- 2 cups onion, thinly sliced
- 1 tbs tomato paste
- 1 t. garlic, minced
- 3 tbs all-purpose flour
- 1/2 cup dry sherry
- 1 can (10.5 oz.) beef consomme
- 1/4 cup sour cream
- 1 tbs horseradish
- 1 tsp lemon juice
- a couple of dashes of Tabasco
- Salt & pepper to season

- 1/2 cup butter, softened
- 1 1/3 cups sugar
- 3 large eggs
- 1 1/2 cups flour
- 1/2 tsp salt
- 1/8 tsp baking soda
- 1/2 cup sour cream
- 1 cup shredded zucchini
- 1 tbs lemon zest
- 2 tsp poppy seeds

- 1 (3.4 oz pkg) instant vanilla pudding mix
- 1 tsp baking soda
- 1 tsp salt
- 2 cups semisweet chocolate chips
- 1 cup chopped nuts
