Almond Sugar Cookies

In a large bowl, cream butter and sugar until light and fluffy
- GLAZE:
- COOKIES
- 1 cup butter, softened
- 3/4 cup sugar
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Additional sugar
- 1 cup confectioners' sugar
- 1-1/2 teaspoons almond extract
- 2 to 3 teaspoons water
- Green food coloring, optional
- Sliced almonds, toasted
Hashbrown Casserole

- 2 lbs. frozen hashbrowns
- 1/2 ½ C. melted butter
- 12 oz. French onion dip
- 1 can cream of chicken soup
- 2 C. cheddar cheese
- salt, pepper
- Top: crunched chips and ¼ C. melted butter.
Shrimp and Pasta Salad

- Ingredients
- 1 lb. small shrimp, peeled, deveined, and cooked (I buy the frozen, pre-cooked version for quick preparation)
- 8 ounces elbow macaroni pasta, cooked and rinsed in cold water
- 1/4 cup chopped green onion
- 1 green bell pepper, diced
- 2 cups diced celery
- 1 cup frozen peas, thawed
- 1 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon white vinegar
- 1 teaspoon sugar
- 2 tablespoons fresh minced dill
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Taco Dip

- 1 1/2 1 ½ lb. hamburger
- 1 pkg. taco seasoning
- 2 *2 lb. Velveeta
- 2 T. onion
- 14 ½ oz. can stewed tomatoes, drained
- * Can also use 1 lb. Velveeta and 1 lb. Mexican Velveeta OR 1 lb. Velveeta and 1 lb. cheddar
Corn Dip-cold Mexican

1. In a medium to large bowl, combine sour cream,mayonnaise and cumin
- 3 (11 ounce) cans mexicorn whole kernel corn, drained
- 2 cups shredded cheddar cheese
- 1 (7 ounce) can diced green chilies
- 2/3 cup green onion, chopped
- 3/4 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 3/4 cup mayonnaise
- 1 (8 ounce) container sour cream
- chopped japaleno-to your liking
- Whaoo Chili seasoning (Tastefully Simple) or chili powder
- cayenne pepper-to your liking
Grape Dessert by Kari

- Mix together:
- 4.5 lb. of black, red and green grapes.
- 8 oz. of softened cream cheese
- 8 oz. sour cream
- 1/2 ½ cup granulated sugar
- 1 tsp. vanilla
Enchilada Meatballs

Preheat the oven to 350 degrees F (175 degrees C)
- I used this Corn Bread Recipe:
- 2 cups crumbled cornbread (see link for homemade cornbread)
- 1 (10 ounce) can enchilada sauce, divided
- 1/2 teaspoon salt
- 1 1/2 pounds ground Turkey
- 1 (10 ounce) can tomato sauce
- 1 cup shredded Mexican cheese blend, divided

Chicken Dip

Combine first 7 ingredients
- 1 C. mayo
- 1 C. sour cream
- 2 T. dried minced onion
- 8 oz. can water chestnuts, drained and chopped
- 2 T. dried parsley flakes
- 1 T. soy sauce
- 1 tsp. garlic powder
- 2 C. shredded cooked chicken breast.
Cauliflower Spinach Salad

- 1 C. Mayo/Salad dressing
- 1/4 C. grated parmesan cheese
- 2 T. sugar
- 1 T. finely chopped onion
- 1 T. parsley, minced
