  • 2 C. semisweet chocolate chips
  • 6 T. butter, cubed
  • 3/4 ¾ tsp. mint extract
  • 2 C. crushed Oreos (about 20 cookies)
  • 2 C. chopped walnuts (opt)
  • 2 pkg cream cheese-8 oz each
  • 1/2 ½ C. sugar
  • 4 eggs
  • 1/4 ¼ C. flour
  • 2 T. cold brewed coffee

  • 1 can corn, drained
  • 1 can black-eyed peas, drained
  • 4-5 green onions
  • Green pepper, chopped
  • Red pepper, chopped

  • 2 japalenos, chopped, start with seeds from 1 pepper, add more if desired.
  • Sauce: Boil until sugar is dissolved

  • Glaze:
  • 2 2 2 cups all-purpose flour
  • 2 2 2 teaspoons baking soda
  • 1/2 1/2 1/2 teaspoon salt
  • 2 2 2 teaspoons ground cinnamon
  • 3 3 3 large eggs
  • 2 2 2 cups sugar
  • 3/4 3/4 3/4 cup vegetable oil
  • 3/4 3/4 3/4 cup buttermilk
  • 2 2 2 teaspoons vanilla extract
  • 2 2 2 cups grated carrot
  • 1 1 can 1 (8-ounce) can crushed pineapple, drained
  • 1 1/2-ounce) 1 1/2-ounce) 1 (3 1/2-ounce) can flaked coconut
  • 1 1 1 cup chopped pecans or walnuts
  • 3 3 (9-inch) round cakepans with wax paper; lightly grease and flour wax paper. Set pans aside.
  • 4 together first 4 ingredients.
  • 4 3 and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour batter into prepared cakepans.
  • 1 1 1 cup sugar
  • 1 1/2 1 1/2 1/2 teaspoons baking soda
  • 1/2 1/2 1/2 cup buttermilk
  • 1/2 1/2 1/2 cup butter or margarine
  • 1 1 1 tablespoon light corn syrup
  • 1 1 1 teaspoon vanilla extract
  • Preparation
  • 5 to 4 ingredients to a boil in a large Dutch oven over medium-high heat. Boil, stirring often, 4 minutes. Remove from heat, and stir in vanilla.
  • Frosting:
  • 3/4 3/4 3/4 cup butter or margarine, softened
  • 1 1 package 1 (8-ounce) package cream cheese, softened
  • 1 1 package 1 (3-ounce) package cream cheese, softened
  • 3 3 3 cups sifted powdered sugar
  • 1 1/2 1 1/2 1/2 teaspoons vanilla extract
  • Preparation
  • Beat butter and cream cheese at medium speed with an electric mixer until creamy. Add powdered sugar and vanilla; beat until smooth.

Bake at 325 for 25 to 30 minutes or until set

  • Combine:
  • 2 1/2 2 ½ C. graham cracker crumbs
  • 3/4 ¾ C. butter, melted
  • 1/4 ¼ C. sugar
  • -Reserve 1 cup mixture for topping. Press remaining mixture onto bottom of ungreased 9x13. Sprinkle with ¾ V. swirled morsels (your choice) over crust.
  • Beat: until smooth:
  • 2 pkg (8 oz each) cream cheese, softened
  • 3/4 ¾ C. sugar
  • 1/4 ¼ C. flour
  • 1 T. vanilla
  • -Add 4 eggs, 1 at a time, until smooth. Pour over crust and morsels in pan. Sprinkle with remaining morsels (from a 10 oz package) and remaining crumb mixture.

Directions: *Place butter in a large mixing bowl and beat until smooth

  • 1/2 cup (1 stick/8 Tablespoons) butter (set at room temp about 10 minutes, but should still be cool)
  • 8 oz. cream cheese (directly from fridge)
  • 1 teaspoon vanilla extract (always use pure vanilla extract if possible)
  • 3-4 cups powdered confectioners sugar
  • 1 to 4 Tablespoons heavy cream, heavy whipping cream (or milk- although I do like the richness that cream adds)
  • For Chocolate Frosting: (my favorite!) add 1/2 cup unsweetened cocoa (I use Ghirardelli brand, it’s really good). Add the cocoa powder before adding the powdered sugar, so it gets fully incorporated into the butter and cream cheese.

Combine powdered sugar and lemon juice in small bowl

  • 1 Cup (6 oz) white morsel chips
  • 1 Cup butter, softened
  • 1 Cup powdered sugar
  • 2 1/2 2 ½ Cups flour
  • 1 1/2 1 ½ Cups sugar
  • 3 Tbsp. Fresh lemon juice
  • 1 tsp. baking powder
  • 2 tsp. vanilla extract
  • 1 1/3 Cups buttermilk
  • 1/2 ½ tsp. salt
  • 3 eggs
  • 3-4 tsp. grated lemon peel
  • Melt morsels in microwave at 70% power for 1 minute; stir. Microwave additional 10 seconds, stirring until smooth; cool slightly.
  • Combine flour, baking powder and salt in small bowl.
  • Beat butter, sugar and vanilla until creamy. Beat in eggs one at a time, beating well after each egg. Beat in lemon peel and melted morsels. Gradually beat in flour mixture alternately with buttermilk. Pour into greased and floured bundt pan.
  • Bake for 50-55 minutes or until wooden pick inserted in cake comes out clean. Cool in pan on wire rack for 10 minutes.
