Homemade Sausage Gravy and Biscuits

Break up and brown sausage well (drain) add salt and pepper, mix until brown
- 1 lb Tennessee pride mild sausage
- 1/2 gal milk
- 8 biscuits
- salt and pepper to taste
- corn starch
Mint-Chocolate Brownies

1 Heat oven to 350°F (325°F for dark or nonstick pan)
- Brownies
- 1 box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
- Water, vegetable oil and egg called for on brownie mix box
- 2/3 cup chopped pecans
- 1 cup (6 oz) mint-flavored chocolate chips
- Mint Frosting
- 1 cup Betty Crocker® Rich & Creamy vanilla frosting (from 16 oz container)
- 1/4 teaspoon mint extract
- 1 drop green food color, if desired
- Shiny Chocolate Glaze
- Reserved mint-flavored chocolate chips
- 4 teaspoons butter or margarine
- 4 teaspoons corn syrup
- 1 to 2 teaspoons hot water
Shrimp with Saffron Rice

Place all ingredients, except shrimp and chives, in the inner pot and place in the rice cooker
- 1 cup Jasmine or other long-grain rice
- 1 cup low sodium chicken broth
- 1 bottle (8 oz) clam juice, or 1 cup water
- 2 tbsp. unsalted butter
- 1 tbsp. dried minced onion
- zest of 1 lemon
- 2 tbsp. lemon juice
- 1 generous pinch of saffron
- 5-6 drops tabasco sauce
- 8 oz. large shrimp, peeled, de-veined, tails left on
- dried minced chives for garnish

Pizza Spaghetti Casserole

Boil water & salt for Spaghetti noodles, once it starts boiling, add noodles
- 1 lb. Ground meat (I like turkey)
- 1 16 oz. box uncooked spaghetti noodles
- 1/2 teaspoon salt
- 1/2 teaspoon Oregano
- 1/2 teaspoon garlic powder
- 1/2 Cup Milk
- 1 Egg
- 2 ounces sliced pepperoni (I like Turkey)
- 1 (26 ounce) jar pasta sauce
- 1 16 oz. can diced Italian style tomatoes
- 1/4 cup grated parmesan cheese
- 1 (8 ounce) package shredded Italian cheese blend
- Any other pizza toppings, you can add like Black olives, sausage, onions, green peppers, etc...
Green Chile and Chicken Rice

Place all ingredients in the inner pot and stir
- 1-1/2 cups medium-grain rice, such as Calrose
- 3 cups low sodium chicken broth
- 2 tbsp. dried minced onion
- 1/2 tsp. kosher salt
- 1 can (10 oz) chicken breast chunks with liquid
- 1 can (4 oz) diced green chiles with liquid
- salt to taste

PREPARE cake batter and bake in 13x9-inch pan as directed on package
- 1 pkg. (2-layer size) yellow cake mix
- 2 cups boiling water
- 2 pkg. (3 oz. each) JELL-O Berry Blue Flavor Gelatin
- 1 cup cold water
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Mustard Baked Chicken

- 1 1/2 Tbs. chopped fresh thyme
- 3 Tbs. chopped fresh flat-leaf parsley
- 3/4 tsp. Worcestershire sauce
- 2 tsp. fresh lemon juice
- 1 1/2 tsp. kosher salt
- Freshly ground pepper, to taste

- For the cupcakes:
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 16 Tbs. (2 sticks) unsalted butter
- 1 3/4 cups granulated sugar
- 4 eggs, lightly beaten
- 1 Tbs. vanilla extract
- 2/3 cup milk
- For the buttercream frosting:
- 6 cups confectioners' sugar
- 16 Tbs. (2 sticks) unsalted butter
- 4 1/2 Tbs. milk, plus more, if needed
- 2 tsp. vanilla extract
- 1/2 tsp. salt
- Food colorings as desired (optional)
