Cheesy Potato Casserole Hashbrown

Preheat oven to 350°F. Combine all ingredients in a large bowl reserving ½ cup of cheese for topping
- 32 ounces frozen shredded hash browns defrosted
- ½ cup melted butter
- 1 10 ¼ ounce can of cream of chicken soup (or cream of cheddar)
- 1 pint sour cream
- ½ cup onion finely chopped
- 2 cups colby cheese grated
- ¼ teaspoon pepper
Cabbage Rolls

Fill a large dutch oven w/water, bring to boil, add cabbage & cook about 20 minutes
- 1 large cabbage
- 2 lbs lean ground beef
- 1 cup uncooked rice
- 2 eggs
- 1 tsp dried thyme
- 1 lb cooked smoked sausage, cut into 1 inch slices

Cover potatoes with water in large pan
- 1 1/4 1 ¼ lb potatoes (cut into chunks)
- 4 oz cream cheese
- 1/4 ¼ + ¾ c shredded cheddar cheese
- 1 lb. ground beef,
- 1/2 onion, chopped
- 3 T flour
- 1/2 teaspoon garlic powder
- 1 1/2 1 ½ c beef broth
- 1/2 ½ c Marsala wine
- 2 T tomato paste
- 3 splashes Worcestershire
- 1 cup frozen corn
- 1 c frozen peas
- 1 c shredded carrots
- 3 T chopped fresh parsley
- Salt and pepper
Spicy Potlatch Chicken Salad

Preheat a grill pan over medium-high heat
- 2 boneless, skinless chicken breast halves,
- pounded to 1/2-inch thickness
- 1 Tbs. olive oil
- 1 Tbs. potlatch seasoning
- 1 ⁄4 cup sour cream
- 1 ⁄4 cup mayonnaise
- 1 celery stalk, chopped
- 2 Tbs. finely chopped red onion
- 2 Tbs. chopped fresh flat-leaf parsley
- Salt and freshly ground pepper, to taste

- 1 tablespoon vegetable oil
- 1 1/2 pounds ground beef
- 1/2 medium-sized green bell pepper, chopped
- 1 small onion, chopped
- 1/2 pound fresh mushrooms, quartered
- 1 (28-ounce) jar spaghetti sauce
- 1 (8-ounce) package elbow macaroni, cooked according to package directions
