CRUSTY CORN BREAD

Mix dry ingredients and combine egg, milk and shortening
- 1 C flour
- 1 C cornmeal
- 1 t salt
- 1 beaten egg
- 3 1/2 t baking powder
- 1 C milk
- 2 T sugar
- 1/4 C melted shortening
DRIED BEEF CASSEROLE

Cook macaroni and drain. Melt margarine and saute until tender the celery, onion, and peppers
- 1 1/2 C uncooked macaroni
- 1 can cream of mushroom soup
- 1 C milk
- 1/3 C chopped celery
- 1/3 C chopped onions
- 1/3 C chopped green peppers
- 1 package dried beef
- 1 t parsley
- 1 cube margarine
- 1/3 C shredded cheese
LASAGNA

Saute sausage and beef, onion and garlic until brown
- 1 lb italian sausage
- 1/2 lb ground beef
- 1/2 C chopped onion
- 2 cloves garlic, crushed
- 2 T sugar
- 1 T salt
- 1 1/2 t basil
- 1/2 t fennel seed
- 1/4 t pepper
- 1/4 C parsley
- 4 C canned tomatoes
- 2 (6oz) cans tomato paste
- 12 lasagna noodles
- 1 container ricotta cheese (15 oz)
- 1 egg
- 3 oz parmesan cheese
- 1/2 t salt
- 3/4 lb mozzarella, sliced
RED POTATO SOUP

Place potatoes in a saucepan and cover with water
- 2 1/2 lbs unpeeled small red potatoes, cut into 1 inch cubes
- 1 large onion, diced
- 3 celery ribs, diced
- 3 bacon strips, diced
- 2 quarts milk
- 4 C water
- 3 T chicken bouillon granules
- 1 t salt
- 1/2 t pepper
- 3/4 C butter
- 3/4 C flour
- 1 C whipping cream
- 1/2 C minced fresh parsley
- shredded cheddar cheese
- green onions
BAKED CHICKEN

Cut up chicken and place in a pyrex baking dish
- 1 whole chicken
- 1 T oregano
- 1 stick butter
- 1/4 C parmesan cheese
- 1 T garlic
- 1 lemon
- salt, pepper
LIME HONEY MUSTARD DRESSING

Combine all ingredients in a bowl
- 1/4 C rice vinegar or white wine vinegar
- 1 shallot, finely chopped
- 2 T finely chopped cilantro
- 1 1/2 t Dijon mustard
- 1 1/2 t honey
- Grated rind of 1 lime
- 1 t fresh lime juice
- 1/2 t grated peeled fresh ginger
- 1/2 t salt
- 1/8 t coarsely ground black pepper
- 1/4 C extra-virgin olive oil
ORANGE PUDDING JELLO

Combine tapioca pudding, vanilla pudding and orange jello with 2 1/2 C water in saucepan and bring to boil stirring...
- 1 3 oz box tapioca pudding (not instant)
- 1 3 oz box vanilla pudding (not instant)
- 2 3 oz boxes orange jello (not instant)
- 1 small can crushed pineapple, drained
- 1 small can mandrin oranges, cut up, drained
- 8 oz Cool Whip
PRIME RIB ROAST

Mix equal parts of whatever seasonings you like-we like lots of pepper
- 1 large boneless rib roast
- seasonings (pepper, garlic salt, seasoned salt)
RED, WHITE AND BLUEBERRY BREAKFAST SMOOTHIE

Combine all ingredients in a blender and puree until smooth
- 6 oz low fat organic vanilla yogurt
- 4 ripe strawberries, stemmed, sliced
- 1/2 C blueberries
- 1 T oat bran (optional)
- 4 oz cranberry juice
- 1 T honey
- 1 T lime juice
- 1/2 C crushed ice
CHICKEN CACCIATORE

In a deep saute pan over medium heat, warm olive oil
- 1 T olive oil
- 4 bacon slices, cut into 1/2" pieces
- 1 chicken, about 4 lb., cut into ten pieces
- salt and freshly ground pepper, to taste
- 1 onion, cut into 1/2" pieces
- 12 oz white button mushrooms, cleaned and halved
- 3 garlic cloves, crushed
- 3 fresh oregano sprigs
- 3 fresh thyme sprigs
- 1/2 C red wine
- 1 C unsalted chicken stock
- 2 C chopped tomatoes
