MARSHMALLOW FRUIT DIP

Set aside 1 t orange rind
- 1 T grated orange rind, divided
- 1 (7 oz) jar marshmallow cream
- 1/2 C mayonnaise
- 1 t grated lemon rind
- 1 T orange juice
- 1 t lemon juice
SOUTHWESTERN CORN BAKE

Mix all ingredients together, except chilies and cheese
- 2 ( 16 to 17 oz) cans cream-style corn
- 2 eggs, beaten
- 3/4 C yellow cornmeal
- 1 t garlic salt
- 6 T salad oil
- 1 (4 oz) can green chilies, finely cut
- 2 C grated Cheddar cheese
BARBECUE BEEF SANDWICHES

Trim fat from roast. Brown meat on all sides in hot oil in a Dutch oven
- 3 lb boneless beef chuck roast
- 3 t oil
- 1 C water
- 2 1/2 C ketchup
- 1 (15 oz) can tomato sauce
- 1 C chopped onion
- 1 C green pepper
- 1/2 t pepper
- 1/2 t ground cumin
- 1/4 C fresh jalapeno
- 1/4 C grape jelly
- 2 to 4 T honey
- 2 T Worcestershire sauce
- 1 1/2 t hot pepper sauce
- 3 cloves garlic, minced
- 1 t chili powder
- 1 T liquid smoke
- hamburger buns
COUSIN ANNA'S POTATOES

Cut potatoes into quarters
- 8 medium sized potatoes peeled
- 1/2 C parmesan cheese
- 1 T parsley
- 1 T oregano
- 2 sticks butter
BANANA CHOCOLATE CHIP COOKIES

Sift dry ingredients together
- 2 1/4 C flour
- 1/4 t soda
- 3/4 t salt
- 1 C sugar
- 2 t baking powder
- 2/3 C shortening
- 2 eggs
- 1 C bananas
- 1 t vanilla
- 1 C chocolate chips
PUMPKIN SOUP

Heat the butter in a large saucepan and saute the onions over medium heat for 3-4 minutes until softened
- 2 T unsalted butter
- 3 T chopped onion
- 2 T flour
- 6 C chicken broth
- 1 (15 oz) can pumpkin (unsweetened)
- 1 (8 oz) jar applesauce
- 1 t salt
- 1/2 t ground ginger
- 1/4 t nutmeg
- 1 C heavy cream
- Ground pepper to taste

MOIST AND MINTY BROWNIES

Preheat oven to 350 degrees
- 1 1/4 C flour
- 1/2 t baking soda
- 1/4 t salt
- 3/4 C sugar
- 1/2 C (1 stick) butter
- 2 T water
- 10 oz package (1 1/2 C) Nestle Toll House mint flavored semi-sweet chocolate morsels, divided
- 1 t vanilla extract
- 2 eggs
FRENCH TOAST

Cut bread and arrange in a 13"x9" cake pan
- 8 slices (3/4-inch) French bread
- 1 C milk
- 4 eggs
- 2 T orange juice
- 2 T sugar
- 1/2 t nutmeg
- 1/2 t vanilla
- 1/3 C butter
- 1/4 C brown sugar
- 1/2 C pecans, chopped
- 1 T butter
WILD RICE AND CHICKEN SOUP

Melt butter and saute onion
- 6 T butter
- 1 T minced onion
- 1/2 C flour
- 3-6 C chicken broth
- 2 C cooked wild rice
- 1 C cooked chicken
- 1/2 C finely shredded carrots
- 3 t chopped slivered almonds
- 1/2 t salt
- 1 C half and half
- 2 t dry sherry (optional)

CHOCOLATE CARAMEL CAKE

- 1 German chocolate cake mix
- 1 can sweetened condensed milk
- 2/3 C caramel ice cream topping
- 4 chocolate covered toffee bars (Heath, chopped)
- 8 oz whipped topping
