GRANDMA MCLEY'S BROWNIES

Melt together sugar, butter and cocoa in saucepan until sugar dissolves
- 2 C sugar
- 2/3 C butter
- 3 T cocoa
- 1 1/2 C flour
- 1/2 t salt
- 1 t baking powder
- 1 t vanilla
- 3 eggs
GUACAMOLE

Mix all ingredients. Cover and refrigerate to blend flavors, at least 1 hour
- 2 large ripe avocados, mashed
- 4 oz sour cream
- 2 medium tomatoes, finely chopped
- 1 medium onion, chopped
- 1 clove garlic, finely chopped
- 2 T finely snipped cilantro
- 1 T vegetable oil
- 2 T lime juice
- 1/2 t salt
- dash of pepper
- little salsa
EGGPLANT PARMESAN

Mix beaten eggs and milk. Slice eggplants into 1/2" pieces
- 2 medium sized eggplants
- 2 C flour
- 2 eggs
- 1 C milk
- 1/2 C parmesan cheese
- 1 12 oz package shredded mozzarella cheese
- 4 hard boiled eggs (sliced 1/4" thick)
- 2 C bread crumbs
- Italian tomato sauce
- 1 t salt
- 1 t pepper
- 1 t oregano
- 1 t basil
- 1/2 t garlic powder
ROLLED PIZZA-SICILIAN STYLE

Defrost dough according to directions on package
- 1 loaf frozen bread dough
- 1 6 oz can tomato paste
- 1 t oregano
- 1 t basil
- 1/4 C parmesan cheese
- 1/2 C mozzarella cheese
- 4 slices ham or prosciutto
- 2 links Italian sausage
- 12 slices pepperoni
- 1 egg
- 1 C frozen O'Brien potatoes (cook as directed on package)
CHEESEBALL

Mix all ingredients except pecans and shape into ball
- 2 8 oz packages cream cheese
- 1 small can crushed pineapple (drained)
- 1/4 C chopped onion
- 1/4 C chopped green pepper
- 1/4 C mayonnaise
- pecans
CHICKEN TETRAZZINI

- 1/2 stick butter
- 2 T flour
- 1 can mushroom soup
- 1 soup can light cream
- 1 1/2 t salt
- 1/4 t black pepper
- 1 can mushrooms
- 1 C blanched almonds
- 5 oz package spaghetti noodles
MINTS

Let cheese stand at room temperature several hours
- 1 8-oz package cream cheese
- 2 packages powdered sugar (about)
- few drops of flavoring
- few drops of coloring
- granulated sugar
CANNELLONI

Saute veal until all of the pink is gone
- 1 lb ground veal or 1/2 lb ground beef and 1/2 lb ground pork
- 1/2 C chopped spinach cooked and drained
- 1/4 C parmesan cheese
- 1/2 C bread crumbs
- 1 t garlic powder
- salt and pepper
- 2 T carrots chopped fine
- 1 1/2 C mozzarella cheese
BANANA OATMEAL MUFFINS

Mix together oil, sugar, eggs and bananas
- 1 C sugar
- 1/2 C oil
- 1 t soda
- 2 eggs
- 3/4 C finely chopped pecans
- 1 t vanilla
- 1 1/2 C flour
- 1/2 C raisins
- 3 or 4 ripe bananas, mashed
- 1/4 t salt
- 1/2 C uncooked oatmeal
STUFFED CORNISH HENS

Cook 3/4 C butter, celery, onion for 5 minutes
- 3/4 C butter
- 2 medium celery stalks, diced
- 1 medium onion, diced
- 1/4 lb mushrooms, chopped
- 1 C fresh breadcrumbs (2 slices bread)
- 1/4 t rubbed sage
- 4 1 lb hens
