Cannoli Angel Food Cake (Gina Tite Wallace)

Bake an angel food cake. Bake according to package directions
- Cannoli filing:
- 8 oz Cream Cheese (softened)
- 16 oz Ricotta Cheese (drained)
- 3/4 C. Powdered Sugar
- 1/2 C. Mini Chocolate Chips
- 1 C. Pistachio nuts chopped
- 1 t. each Candied orange, lemon, cherries
- 3/4 t. Rum extract
- 1/2 t. Vanilla
Cannolli Cheesecake

1. Fill a roasting pan or a 13 x 9-inch baking pan with hot tap water to a depth of 1 inch
- CHEESECAKE
- 1 container (3 pounds) whole-milk ricotta cheese (6 cups)
- 7 large eggs
- 1 1/4 cups granulated sugar
- 1/2 cup all-purpose flour
- 1 tablespoon vanilla extract
- 11/2 teaspoons freshly grated orange peel
- 1/3 cup semisweet chocolate mini-chips
- TOPPING
- 3 tablespoons apricot preserves
- 3 small navel oranges, peel and white pith cut off, then sliced in thin rounds
- 1/4 cup shelled pistachio nuts, skins rubbed off
TURNIP GREEN CASSEROLE (Jeff Ford)w

Mix ingredients together. Grate medium cheddar cheese over top
- 1 (16 oz.) can chopped turnip greens, drained
- 1/2 c. mayonnaise (Hellmann's)
- 1/2 can cream of mushroom soup
- 2 tbsp. vinegar
- 1 lg. tbsp. horseradish
- 2 eggs, beaten
- Dash red pepper
Mexican Taco Casserole Recipe (Mike Pryor)

Preheat oven to 375° F. Cook beef, onion and garlic until beef is browned; drain
- 1 pound ground beef (extra lean)
- 1 small onion, chopped (1/4 inch dices)
- 2 cloves garlic, finely chopped
- 1 cup water
- 3/4 cup Taco Sauce - Medium
- 3 ounces Diced Green Chiles
- 1 can (2.25 oz.) sliced ripe olives, drained, divided
- 1 package Taco Seasoning Mix - Regular
- 1 package (4.5 oz) Taco Shells (12 ct), broken (try Doritos Nacho Chips!!)
- 2 cups shredded mild cheddar cheese, divided
- 1/4 cup chopped tomatoes
- 1/8 cup sliced green onions

- Casserole:
- 2 cups Chicken, chopped
- 1 cup Seasoned Croutons
- 1 cup Frozen Peas
- 1 Onion, medium
- 1 tsp Salt
- 1/4 tsp pepper
- 1 1/4 cups Chicken Broth
- 1/4 cup Mayonaise
- Topping:
- 1/2 tsp Salt
- 1/2 tsp Celery Salt
- 1 cup Cheese, shredded
- 1/4 cup Mayonaise
- 1/2 Almonds, slivered
- 1/4 cup Flour

- 6 (3-ounce) chicken cutlets, pounded to evenly flatten
- Salt and freshly ground black pepper

- 1 tbsp.veg. oil
- 4 skinless chicken breast
- 4 tsp. chili powder
- 2 tsp. ground cumin
- 1 lg. onion , chopped
- 1 med.green pepper chopped
- 1 can cream of chicken soup
- 3/4 cup water
- 1 1/2 cups frozen whole kernel corn
- 2 cans white kidney beans , rinsed and drained
- 2 tbsp. shredded cheese
BROCCOLI CAULIFLOWER CASSEROLE (Jerrett Tite)c

Cut broccoli and cauliflower into edible-sized pieces of and set aside for the moment
- 1 bunch broccoli
- 1 head cauliflower
- 1 can evaporated milk
- 1 can cream of mushroom soup
- 1 can cream of chicken/celery soup
- 2 cloves garlic
- pinch of salt
- 1 tbsp. paprika
- 1 tbsp. oregano
- 1/2 tsp. cayenne pepper (if desired)
- 1/2 cup Parmesan cheese
- 1/4 cup butter, softened (optional) (to be mixed with soup and milk)

- 1/2 cup salad oil
- 1/2 cup sugar
- 1/4 cup vinegar
- 2 tsp. soy sauce
