Grilled Pineapple-Chicken Foil Packets

1 Heat gas or charcoal grill
- 1/3 1/3 1/3 cup pineapple preserves
- 2 2 2 tablespoons packed brown sugar
- 1 1 1 tablespoon soy sauce
- 1/4 1/4 1/4 teaspoon crushed red pepper
- 4 4 2-inch boneless skinless chicken breasts, cut into 2-inch cubes (1 lb)
- 1 1 1 1/2-inch red bell pepper, cut into 1 1/2-inch cubes
- 1 1 1 1/2-inch green bell pepper, cut into 1 1/2-inch cubes
- 1 1 1 cup pineapple chunks
- 1/4 1/4 1/4 teaspoon salt
Broccoli Slaw Salad

In a large bowl, mix broccoli slaw, chicken, fruits & nuts
- 3 Cups Broccoli slaw
- (You may chop/shred your own broccoli if the
- broccoli slaw is not available)
- 1 Cup chopped cooked chicken breast
- 1 Large red or green apple diced
- 1/2 Cup Raisins or Craisins
- (Craisins are dried cranberries)
- 1/2 Cup seedless grapes (red or green) (halves)
- 1/2 Cup walnuts chopped
- 1/2 Cup reduced fat mayonnaise
- 2 Tbs. skim milk
- 1 Tsp. honey
- 1 Tsp. lemon juice
- 1/8 c celery seed (optional)
- Salt to taste
Hearty Lasagna Soup «

1. In a large soup pot over medium-high heat, heat the oil

- 1 1 1 medium onion, chopped
- 1 1 1 small red pepper, chopped
- 4 4 4 garlic cloves, minced
- 1 1 1 teaspoon Italian seasoning
- 1/2 1/2 1/2 teaspoon oregano
- 1 1 1 pound lean ground beef
- 1 1 can 1 (28-ounce) can crushed tomatoes
- 1 1 1 teaspoon granulated sugar
- 1 1 1 (14-ounce) can, or 2 cups reduced-sodium beef broth
- 1/4 1/4 1/4 teaspoon crushed red pepper
- 1 1 4 cup dry campanelle pasta or 4 lasagna noodles
- 3 3 3 tablespoons grated Parmesan cheese
- 1/4 1/4 1/4 teaspoon salt (optional)
- 1/2 1/2 1/2 cup reduced-fat shredded mozzarella cheese
Chicken Burrito Skillet

In a 12" skillet, heat the oil on medium-high heat
- 2 Tbsp olive oil
- 1 lb boneless skinless chicken breast, cut into bite-size pieces
- 1 cup red pepper, medium dice
- 1 cup onion, medium dice
- 1-1/2 tsp minced garlic
- 2 tsp chili powder
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp dried oregano
- 1-1/2 tsp salt
- 1/4 tsp cayenne
- 1-1/2 cups chicken stock
- 1 (10-oz) can diced tomatoes with chilies
- 1 (15-oz) can pinto beans, drained and rinsed
- 1/2 cup frozen corn
- 1 cup quinoa
- 1 cup shredded low-fat cheddar
- 1 cup shredded low-fat Monterey Jack cheese
- 1/4 cup sliced scallions
- 2 avocados, medium dice
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Tilapia Sandwiches with Cilantro-Lime Mayonnaise

Blackened Tilapia
- Cilantro-Lime Mayonnaise:
- 1/4 cup sweet paprika
- 2 tablespoons ground thyme
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/2 cup (1 stick) butter, melted
- 4 (10-ounce) tilapia fillets
- Cilantro-Lime Mayonnaise, recipe follows
- 4 kaiser rolls, split, buttered, and toasted
- Mango Salsa, recipe follows
- Directions
- Heat a cast-iron skillet over
- 1 cup mayonnaise
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and freshly ground black pepper
- In a small bowl, combine all the ingredients. Cover and chill.
- Mango Salsa:
- 2 mangos, peeled and diced
- 2 jalapenos, seeded and diced
- 1 small orange bell pepper, diced
- 1/2 small red onion, diced
- 1/2 cup chopped fresh cilantro
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1 lime, juiced
- Combine all the ingredients in a small bowl, tossing gently to coat. Cover and refrigerate.
Black & White Chunk Cookies

- 1 c all-purpose flour
- 1/3 c cocoa
- 1/2 tsp baking soda
- 1/4 tsp salt
- 8 Tbsp butter, softened
- 1/2 c white sugar
- 1/2 c light brown sugar, firmly packed
- 1 lg egg at room temperature
- 1 tsp vanilla extract
- 6 oz semi-sweet chocolate, cut into 1/4" chunks
- 6 oz white chocoalte, cut into 1/4" chunks
- 1/3 c pecans, coarsely chopped
Potato Latkes with Applesauce

To prepare the applesauce, combine all the ingredients in a medium-size saucepan and simmer over medium heat
- Latkes:
- 2 large eggs, beaten
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/2 cup onion, grated and squeezed of excess moisture
- 4 scallions, chopped
- 2 lbs Yukon gold potatoes
- 4 Tbsp flour
- 1/2 cup vegetable oil
- Applesauce:
- 6 Granny Smith apples, peeled, cored, and cut into large slices
- 1 Tbsp lemon juice
- 1 cup water
- 1 1''-3'' cinnamon stick
- 2 strips lemon zest lemon
- 1/2 cup white sugar
