Irena’s (spur of the moment) Chicken, Kale & Wild Rice Soup

Bring pot to a boil and add 1 ½ cups of Wild Rice……cover pot and turn down to a simmer and cook for 30 minutes
- In a Food Processor add:
- 1 large chicken breast
- 2-3 Carrots
- 1 medium onion (or a few small ones)
- A few cloves of garlic
- Chop all of the above very fine and sauté with a few glugs of olive oil in a large soup pot (season with salt & pepper)
- In a Food Processor pulse:
- 2 pints of cherry tomatoes (Pulse until fine) and add to pot
- Then add 1 small can of tomato paste
- A few springs of Rosemary finely chopped
- 2 quarts of Chicken Broth (or water)
- 1 bunch of Kale finely chopped or whizzed through the Food Processor

- 2 –3 medium-size acorn squash (about similar to a cantaloupe)
- 1-1/2 cups apple cider
- 1/2 cup light brown sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 Tbsp butter, cubed
- 1/3 cup dried cranberries
