- 12 turkey cutlets (breast slices), pounded to 1/4-inch thickness
- Sea salt and freshly ground black pepper
- 24 fresh sage leaves, or 2 tablespoons ground
- 12 paper- thin slices prosciutto
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1/2 cup port wine

- 1-1/4 1-1/4 1-1/4 cups (5 ounces) shredded Cheddar Jack cheese, divided
