JAMBALAYA SOUP

Prep time: 45-60 minutes Serves 8-10
- David's Note:
- There are two types of jambalaya: Cajun and Creole. This recipe leans more towards the Creole style, since it contains tomato.
- Ingredients:
- 1 lb boneless, skinless chicken thighs, diced into 1/2" pieces
- 1/2 tsp salt
- 1/2 tsp pepper
- 1–2 Tbsp cooking oil
- 1 cup diced onion
- 2 stalks celery, diced
- 1 cup diced green pepper
- 3 cloves garlic, minced
- 8 oz andouille sausage, cut in half moons (about 2 sausages)
- 1-1/2 Tbsp Cajun seasoning
- 2 tsp chopped fresh thyme
- 1 tsp dried oregano
- 1/2 cup uncooked brown rice
- 3 cups crushed tomatoes, or 1 (28-oz) can
- 7 cups chicken stock
- 1 lb 21–25 count tail-off shrimp, peeled and deveined
- Sliced green onion, for garnish

- 2 boxes (6-serving size each) vanilla pudding and pie filling mix (not instant)
- 5 1/4 cups milk
- 3/4 cup pineapple juice
- 2 cans (20 oz each) sliced pineapple, drained
- 1 box (12 oz) vanilla wafer cookies
- 2 cups whipping cream
- 2 tablespoons powdered sugar
Caramel Creams

These cookies are delicious plain, but I like to make them into sandwich cookies with the brown butter filling
- FILLING:
- 1 cup butter, softened
- 2/3 cup packed brown sugar
- 2 egg yolks
- 1/2 teaspoon vanilla extract
- 2-1/2 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup finely chopped pecans
- 1/4 teaspoon salt
- 2 tablespoons plus 1-1/2 teaspoons butter
- 1-1/2 cups confectioners' sugar
- 1/2 teaspoon vanilla extract
- 2 to 3 tablespoons heavy whipping
YUMMY KIELBASA & CABBAGE/KRAUT W/ POTATOS

This is a rather easy recipe and its oooohhhh sooo good when you need something to cheer you up! You will need
- 1 or 2 rings of Kielbasa (or smoked sausage of your choice-cut up in bite sized pieces), olive oil, 1 cabbage head (cut it in small bite size pieces), 1 large bag of kraut (drained).

- 1 stalk of celery, including leaves, finely chopped
- 2 medium carrots, cut in half lengthwise, then halved
- 1 medium zucchini, cut into quarters lengthwise, then halved
- 1 tsp dried oregano
- 1 can diced reduced-sodium tomatoes
- 4 cups fat-free, low-sodium chicken broth
- 2 cups water
- 1 bunch kale, stems removed, and roughly chopped
- 1 15 ounce can reduced-sodium kidney beans, drained and rinsed well
- 1 cup uncooked small pasta (I used mini shells)
