STRAWBERRY PROTEIN PUNCH SMOOTHIE

1 Toss all ingredients into a blender and blend for at least 5 minutes to increase volume

- 12 ounces water

Mix all ingredients together in a large bowl and toss with reduced fat ranch dressing
- 2 heads fresh broccoli, chopped
- 1 head fresh cauliflower, chopped
- 1/2 cup of each chopped, red pepper, green pepper, red onion

- 1 cup tomatoes, chopped
- 1 c. reduced fat sharp cheddar cheese, shredded

- 1 whole chicken, approximately 4 pounds, cut into 10 pieces
- 1 3/4 teaspoons kosher salt, divided
- 3/4 teaspoon freshly ground black pepper, divided
- 1 teaspoon olive oil
- 3 chorizo, about 9 ounces, cut into 1/2-inch slices
- 5 garlic cloves
- 1 medium onion, cut into 1-inch pieces
- 1/4 teaspoon smoked paprika
- 1 can (28-ounce) plum tomatoes, well drained
- 2 1/2 cups Arborio rice
- 5 cups hot chicken broth, reduced-sodium

To marinate the vegetables, whisk the ingredients in a small mixing bowl until well-combined
- Marinade:
- 6 Tbsp extra virgin olive oil
- 3 Tbsp balsamic vinegar
- 2 tsp Dijon mustard
- 1/2 tsp sugar
- 1/2 tsp Italian seasoning
- Pinch of garlic powder
- Pinch of onion powder
- 1/4 tsp ground black pepper
- 1/2 tsp kosher salt
- Vegetables:
- 1/4 lb eggplant, peeled and sliced into 1/2" slices
- 1 zucchini or summer squash, ends removed and halved lengthwise
- 1 red pepper, stemmed, seeds removed, and quartered
- 3 medium mushrooms
- 1/2 medium red onion, peeled and cut in 3 wedges
- 1 medium tomato, stemmed and cut into 4 wedges
- 1/2 Tbsp balsamic vinegar
- 1/4 tsp minced garlic
- 1/2 cup fresh basil leaves
- 1/8 tsp ground black pepper
- 1/8 tsp kosher salt
- Bruschetta:
- 1 baguette, sliced into about 25 1/2" slices
