DIRECTIONS Place cucumbers and onions in a large non-reactive bowl
- 2 pounds 4- to 5-inch cucumbers, cut into 1/4-inch slices

- 1 tablespoon whole mustard seeds

- 1/2 teaspoon whole cloves
Harvest Apple Cake with Cream Cheese Frosting

Preheat the oven to 350°F
- Frosting:
- 2 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tsp vanilla
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 4 cups grated apples, peeled
- 1/2 –1 cup nuts
- 1 (8-oz.) package of cream cheese, softened at room temperature
- 3 Tbsp butter, melted

Place ingredients into a food processor and blend until smooth
- 3 garlic cloves, peeled and cut in half
- 3/4 cup sun-dried tomatoes, oil-packed, drained and patted dry
- 1 cup 1% fat cottage cheese
- 1/3 cup fat-free plain yogurt
- 1/3 cup light mayonnaise.

- 1 canned chipotle pepper in adobo sauce (with 1 tsp. sauce), finely chopped

Preheat oven to 350°F. Combine the pancake mix, water, and maple syrup in a medium-size bowl
- 2 cups just-add-water pancake mix
- 1-1/2 cups water
- 1/2 cup maple syrup
- 1 Tbsp butter, cut in 4 pieces
- 6 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp oil
- 3/4 cup finely diced red pepper
