Quinoa Coconut Macaroons

1.Combine the egg whites and honey in a heatproof bowl
- 6 tablespoons egg whites (from about 3 large eggs)
- 1/4 cup honey (raw is preferable; agave or maple syrup would probably as well)
- 1 1/2 cups unsweetened shredded coconut
- 1 cup cooked quinoa
- Pinch of salt

- 2 pounds small red potatoes, quartered
- 1/2 cup butter
- 1/2 cup milk
- 1/4 cup sour cream
- salt and pepper to taste

- This recipe calls for chicken, but I made it w/o chicken.
- 12 ounces Whole Wheat rigatoni pasta
- 1/2 pound fresh broccoli florets
- 1/4 cup extra virgin olive oil
- 1 tablespoon minced garlic
- 2 tablespoons pesto
- 1 cup chopped tomatoes
- 3/4 cup grated Parmesan cheese
- 1 pound boneless chicken breast halves, cooked and chopped
- salt to taste
- ground black pepper to taste
Snow Balls

- 2 cups shortening
- 1/2 cup sugar
- 4 3/4 cups flour
- 1/2 teaspoon salt

- 1/2 bottle black walnut flavorings (if you can't find black walnut flavoring, use butter nut flavoring)
