Best Ever Banana Cake With Cream Cheese Frosting

1 Preheat oven to 275°. -original recipe states 275 but I bumped up the temp to 300
- 1 1/2 cups bananas, mashed, ripe
- 2 teaspoons lemon juice
- 3 cups flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 3/4 cup butter, softened

- 2 teaspoons vanilla

- 1/2 cup butter, softened

For the Crust: Spray 9-inch spring form cake pan with cooking spray
- For the Crust:
- 2 cups Graham cracker crumbs
- 2 tablespoons Sugar
- 1/2 cup Melted unsalted butter
- For the Filling:
- 16 ounce Reduced Fat Cream Cheese (at room temperature)
- 1/2 cup Light Brown Sugar
- 1 teaspoon Ground Cinnamon

Spicy Chocolate Popcorn with Quinoa

1.Preheat the oven to 300 degrees F
- 5 - 6 cups popped popcorn
- 1/2 cup chopped nuts of choice (I used peanuts, but this would also rock with almonds)
- 2 tablespoons whole quinoa (uncooked)
- 1/4 cup coconut oil
- 1/4 cup unsweetened cocoa powder
- 1/4 cup coconut sugar
- 2 tablespoons nut butter of choice
- 1/2 teaspoon cayenne (start with less and work your way up if you're not a fan of heat)
- 1/2 teaspoon salt
- Powdered stevia to taste
Mom's Perfect Pork Chops Recipe

1 Heat a large cast iron frying pan to medium high or high heat (hot enough to sear the meat)
- Dad's dry rub:
- Ingredients
- 4 pork chops
- 1 teaspoon bacon fat, grapeseed oil, or olive oil (or other high smoke point oil)
- Salt
- 1-2 teaspoons of dry rub*
- 1/4 cup cumin seeds
- 3 Tbsp whole black peppercorns
- 1 Tbsp coriander seeds
- 2 Tbsp sugar
- 1 1/2 teaspoons sea salt
- Combine cumin, peppercorns, and coriander in a heavy medium skillet. Stir over medium heat until fragrant and toasted, about 8 minutes. Cool slightly. Finely grind toasted spices in blender. Transfer to a small bowl. Mix in sugar and salt. Makes 1/2 cup.
CHILI COKE ROAST

Directions: 1. Place all ingredients in crock-pot and cook for 7-10 hours depending on size of roast
- 1 beef roast, 3-4 lbs.

Chop cauliflower into medium to large bite-size florets
- For the Topping:
- Ingredients
- 2 large heads cauliflower
- 3 tablespoons EVOO - Extra Virgin Olive Oil
- Salt and black pepper
- 2 tablespoons EVOO - Extra Virgin Olive Oil
- 3 tablespoons butter
- 1 garlic clove, grated
- Zest of 1 lemon
- 2 tablespoons parsley, chopped
- 1 cup breadcrumbs
- For the Sauce:
- 2 tablespoons butter
- 4 tablespoons flour
- 2 cups milk
- Salt and black pepper
- Freshly grated nutmeg
- 1 cup ricotta cheese
CREAMY MAC AND CHEESE

Cook macaroni according to package directions
- 2 cups uncooked elbow macaroni
- 1/2 cup butter, cubed
- 1/2 cup all-purpose flour
- 1-1/2 cups 2% milk
- 1 cup (8 ounces) sour cream
- 8 ounces process cheese (Velveeta), cubed
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon ground mustard
- 1/2 teaspoon pepper
- 2 cups (8 ounces) shredded cheddar cheese

Apple Dog Treat Recipe

Finding treats at a reasonable price can be difficult
- 2 cups whole oats
- 2 cups flour (I used tapioca flour but white rice flour or all purpose flour will do)
- 1 apple, peeled, cored, and finely shredded
- 4 tablespoons water or vegetable stock
Crab Cakes

Drain crab and pick through for shells and cartilage but try not to bread up any of the lumps
- 1 pound can backfin lump crab meat, pacteurized
- 1 egg beaten
- 5 Tlbs mayo
- 1 Tlb fresh parsley, chopped
- 2 tsp Worcestershire sauce
- 1 tsp yellow prepared mustard
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 cup fresh bread crumbs- tear some French or Italian bread into rough cubes & process in blender/I just used Italian bread crumbs.
