Irish Root Vegetable and Squash Soup

This is the most wonderful soup I have ever tasted
- 1 large onion chopped
- 3 carrots, peeled and chopped
- 1 parsnip, peeled and chopped
- 2 sticks celery, chopped
- 1 small sweet potato, peeled and chopped
- 1/2 butternut or similar squash, peeled and chopped
- 2.5 oz orange lentils, rinsed under running cold water
- 1 oz grams butter
- 2 pts vegetable stock
- 1/2 red chili, de-seeded and chopped
- 1 inch piece fresh root ginger, peeled and chopped
- 1 tablespoon chopped fresh thyme
- 2 tablespoons cream
Paprika Parmesan chicken

Beautiful, juicy and delicious
- 3 or 4 chicken breasts (boneless, skinless)
- 2 eggs, lightly beaten
- 1/4 C butter, melted
- 1/4 C flour
- 1/2 C grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 2 tsp paprika
Sour Cream Noodle Bake

A good comfort food, easy to make recipe from the Pioneer Woman
- 1 1/4 lb ground chuck
- 1 15 oz can tomato sauce
- 1/2 tsp salt
- fresh ground black pepper
- 8 oz bag egg noodles
- 1/2 C sour cream
- 1 1/4 C small curd cottage cheese
- 1/2 C sliced green onion (or less to taste)
- 1 C grated sharp cheddar cheese
Rosemary, Parmesan Shortbread Cookies

Nice savory shortbread cookie
- 1/2 C Parmesan cheese, finely grated
- 2 tsp Rosemary, chopped
- 1 C butter
- 2 C flour
- 1 C Confectioners sugar
Blueberry Buttercream

Using a blender, immersion blender or food processor, puree the blueberries
- 3/4 cup (115 grams) fresh blueberries
- 3 cups (306 grams) powdered sugar, sifted
- 2 sticks (227 grams) unsalted butter, at room temperature
- 1/4 teaspoon fine salt
- 2 teaspoons pure vanilla extract
- 1 to 2 tablespoons heavy or whipping cream
- Lemon zest, for garnish
Chicken and Dumplings from the Farm

- Part One - Chicken Soup:
- Two 3-pound chickens, each cut into 6 pieces and backbones reserved
- 1/2 cup (1 stick) unsalted butter
- 6 medium carrots, chopped into 1-inch pieces
- 6 cloves garlic, thinly sliced
- 4 stalks celery, chopped into 1-inch pieces
- 2 large leeks, white part only, chopped into 1/2-inch pieces and soaked in cold water to remove grit
- 2 medium yellow onions, chopped into 1/2-inch pieces
- 1 tablespoon poultry seasoning
- 1/2 cup all-purpose flour
- Part Two - Dumplings:
- 2 1/2 cups flour
- 3/4 cup milk, plus more if needed
- 2 tablespoons butter
- 1 tablespoon baking powder
- 2 teaspoons salt
- 2 large eggs
- 1/4 cup chopped fresh parsley

- 3/4 C brown sugar, packed

- 2 Tbls orange juice (room temperature)
- 3 C all purpose flour

- 1/2 tsp salt
