Jungle Stew

This dish has many names, Johnny Marzetti, Slumgullion, Pasta Fazzuli
- 1 lb ground beef (or turkey)
- 1 medium onion, chopped
- 1 lg stalk of celery cut in chunks
- 1 small red sweet bell pepper, cut in chunks
- 1 small green bell pepper, cut into chunks
- 1 15 oz can of fire roasted diced tomatoes
- 1 can tomato soup
- 1 C beef broth or stock
- 1/2 lb elbow shaped pasta (cooked)
- olive oil
- salt and pepper
- Note: you can use a can of Rotelle diced tomatoes in place of the fire roasted tomatoes. It's great either way!
Roasted Vegetable Chili with Cornbread Biscuits

Sheet pan dinner
- 1 head of cauliflower cut into small florets
- 1 poblano chile seeded and diced
- 4 scallions, roughly chopped, plus more for garnish
- 3 Tbls vegetable oil
- 1 Tbl chili powder
- 1/2 tsp ground cumin
- Kosher salt
- 3/4 C cornmeal
- 1/2 C all purpose flour
- 2 tsp baking powder
- 1 Tbl light brown sugar, packed
- 4 Tbls cold unsalted butter cubed
- 2/3 C buttermilk
- 2/3 C shredded sharp cheddar cheese
- 1 15 oz can black beans, undrained
- 1 8 oz can tomato sauce
- 1 1/4 C frozen fire roasted corn, thawed
- 1 1/2 C low sodium vegetable broth
- , chili powder

- 1cup1 cup confectioners' sugar
- 1cup1 cup creamy peanut butter
- 5tablespoons5 tablespoons unsalted butter, at room temperature
- 3/4teaspoon3/4 teaspoon pure vanilla extract
- 1/4teaspoon1/4 teaspoon kosher salt
- 1/3cup1/3 cup heavy cream
Chili Dog Sauce

- 2 Tbls chili powder
- 2 tsp cumen
- 1 8 oz can tomato sauce
Ravioli Lasagna

This is a basic recipe, can adjusted by adding any other ingredients you may like
- 1 jar (24 ounces) pasta sauce
- 1 package (25 ounces) frozen meat or cheese ravioli
- 1-1/2 cups shredded part-skim mozzarella cheese
- 3 cups fresh baby spinach
Italian Sausages and grapes

This recipe is from the Barefoot Contessa's favorite Italian Restaurant in Providence RI
- 1 1/2 pounds Italian hot sausage
- 1 1/2 pounds Italian sweet sausage
- 3 tablespoons unsalted butter
- 5 to 6 cups (2 pounds) red or green seedless grapes, stems removed
- 2 to 4 tablespoons dry red wine, preferably Chianti
- 3 tablespoons balsamic vinegar
- Fresh Foccaccia or Ciabatta bread, to serve
Guinness Mac and Cheese

A comfort dish that will warm your soul
- 3 tsp Kerrygold butter
- 2 tsp shallots, chopped
- 3/4 C Guinness stout
- 2 C Heavy cream
- 1/2 C grated Kerrygold swiss cheese
- 1/2 C grated Kerrygold Vintage Cheddar
- 1/2 C grated Kerrygold Dubliner
- 3 1/2 C pasta, cooked and cooled
- 3/4 C plain bread crumbs
Vegetable Soup

I had this soup in Ireland and fell in love with it
- 3 parsnips, peeled and cut into 1/2" pieces
- 3 carrots, peeled and cut into 1/2" pieces
- 1 celery root, peeled and cut into 1/2" pieces
- 2 turnips, quatered
- 1 sweet potato, peeled and cut into 1/2" pieces
- 1 butternut squash, (about 2 lbs), peeled and cut into 1/2" pieces
- 1/4 C olive oil
- 1 tsp kosher salt
- 1/2 tsp fresh ground black pepper
- 3 Tbls butter
- 1 stalk of celery, diced
- 1/2 of a sweet onion diced
- 1 qt chicken stock (or vegetable)
- 1/2 C half and half
- salt and pepper to taste
Marshmallows

- 3 packages unflavored gelatin
- 1 cup ice cold water, divided
- 12 ounces granulated sugar, approximately 1 1/2 cups
- 1 cup light corn syrup
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1/4 cup confectioners' sugar
- 1/4 cup cornstarch
- Nonstick spray

- WHITE CHOCOLATE GANACHE:
- 6 eggs
- 1 cup unsalted butter, softened
- 1-3/4 cups sugar, divided

- 1 vanilla bean
- 3 cups cake flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 12 ounces white baking chocolate, finely chopped
- 1/2 cup heavy whipping cream
- SWISS BUTTERCREAM:
- 1 cup sugar
- 1/2 teaspoon cream of tartar
- 4 egg whites
- 1 cup unsalted butter, softened
- 7 tablespoons shortening
