- 3 tablespoons grass-fed gelatin
- 1 cup light-colored honey or maple syrup
- 1/4 teaspoon sea salt
- 1-1/2 teaspoons vanilla extract
- 1/3 cup cacao powder + additional (optional) 2 to 4 tablespoons for dusting

- Ingredients for Crust
- 4 ½ ounces (1 cup) all-purpose flour
- 4 ½ ounces (2 cups) graham crackers, finely ground
- ½ tsp. salt
- ½ cup. brown sugar and stevia baking blend, such as Truvia
- 8 ounces butter (chilled and cut into ½” cubes)
- 1 yolk
- 1/2 tsp. vanilla

- 6 egg yolks
- 2 whole eggs
- 1 ½ cups condensed milk
- 1 ½ tablespoons coconut milk
- 1/8 tsp. salt
- 1 ½ tablespoons lime zest (regular limes)
- 1/3 cup key lime juice, fresh or bottled, such as Nellie & Joe’s
- 2/3 cup of regular lime juice

Mexican Hot Chocolate Recipe

Smooth and creamy with just a touch of spice to warm you!
- 4 tablespoons of unsweetened cocoa powder
- 1 small chunk of your favorite dark chocolate
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of vanilla extract
- 1 pinch of chili powder
- 3/4 cup of milk or half + half (or your favorite milk substitute)
- Boozy Addition: Spiced rum or tequila (if you dare)
Amish Breakfast Casserole

In a large skillet, cook bacon and onion until bacon is crisp; drain
- Preheat oven to 350 degrees
- 1 lb. sliced bacon diced
- 1 medium sweet onion chopped
- 6 large eggs lightly beaten
- 4 cups frozen hash browns shredded, thawed
- 2 cups cheddar cheese shredded
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups Swiss cheese shredded
- 1 lb. mild, bulk sausage
- 1/2 red bell pepper diced
- 1/2 green bell pepper diced
- fresh, snipped chives for garnish

- 1 to 1 1/8 cups lukewarm water*
- 1/4 cup vegetable oil
- 1/4 cup honey, molasses, or maple syrup
- 3 1/2 cups King Arthur Premium 100% Whole Wheat Flour, White Whole Wheat Flour, or Organic White Whole Wheat Flour
- 2 1/2 teaspoons instant yeast, or 1 packet active dry yeast dissolved in 2 tablespoons of the water in the recipe
- 1/4 cup Baker's Special Dry Milk or nonfat dried milk
- 1 1/4 teaspoons salt
- *Use the greater amount in winter or in a dry climate; the lesser amount in summer or a humid climate.

- 1 cup flour
