Cinnamon Rolls or dinner rolls

This recipe is the best and easiest I have ever made
- Filling:
- Rolls: (pastry part)
- 3 (.25) packets active dry yeast
- 1 3/4 C warm water
- 1/2 C honey
- 1/2 C melted butter, plus more for brushing
- 2 tsp salt, plus more for sprinkling
- 2 lg beaten eggs
- 4 to 6 C flour, more if needed
- 4 Tbls butter, unsalted and soft
- 3/4 C pecans, chopped
- 6 Tbls dark brown sugar
- 1 Tbl cinnamon
- Cream Cheese Glaze:
- 1 C powdered sugar
- 1/2 C cream cheese, softened (4 oz)
- 4 Tbls butter, unsalted and soft
- 1 tsp vanilla
- 4 Tbls milk
- melted butter for bushing
Cranberry Salsa

Cool, colorful and refreshing
- 1 12 oz pkg cranberries, fresh or frozen
- 1 bunch of cilantro
- 1 bunch of green onions, cut into 3" lengths
- 1 jalapeño pepper, seeded
- 2 limes juiced
- 3/4 c white sugar
- pinch of salt
Roasted Veggies

perfect for the holidays
- Roasted Brussels Sprouts:
- 3 cups Brussels sprouts, ends trimmed, yellow leaves removed
- 3 tablespoons olive oil
- Salt, to taste
- Roasted Butternut Squash:
- 1 1/2 pound butternut squash, peeled, seeded, and cubed into 1-inch cubes (Yields about 4 cups of uncooked cubed butternut squash)
- 2 tablespoons olive oil
- 3 tablespoons maple syrup
- 1/2 teaspoon ground cinnamon
- Other Ingredients:
- 2 cups pecan halves
- 1 cup dried cranberries
- 2-4 tablespoons maple syrup (optional)
Pie Crust (double)

A great King Arthur recipe
- 2 1/2 cups King Arthur Unbleached All-Purpose Flour or Pastry Flour Blend
- 1 1/4 teaspoons salt*
- 1/4 cup vegetable shortening
- 10 tablespoons very cold unsalted butter
- 6 to 10 tablespoons ice water**
- Reduce the salt to 1 teaspoon if you use salted butter.
- Use the lesser amount of water if you use Pastry Flour Blend.
- TOPPING (OPTIONAL)
- 1 teaspoon milk
- 1 tablespoon coarse sparkling sugar
Chili,... the really fast way

Great recipe for a quick, stick to your ribs meal
- 1 lb ground meat
- 1 (10 oz) can tomatoes with chilies like Ro tele
- 1 (14.5 oz) can diced tomatoes
- 1 pkg (1 oz) dry ranch salad dressing mix like Hidden Valley
- 1 pkg (1.25 oz) taco seasoning
- 1 (15.5 oz) can black beans, rinsed and drained
- 1 (15.5 oz) can pinto beans, rinsed and drained
- 1 (15.5 oz) can kidney beans, rinsed and drained
Hot Chocolate

- 2 1⁄2 cups whole milk
- 2 cups half-and-half
- 4 ounces bittersweet chocolate, chopped
- 4 ounces milk chocolate, chopped
- 1 tablespoon sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon instant espresso (or coffee powder)
- 4 -5 vanilla beans (or cinnamon sticks)
Waldorf salad

Michael's favorite. Sweet and tart yet refreshing and sophisticated
- 3/4 C walnut halves
- 3 large apples with a crisp texture, 1 red, 1 green and 1 yellow
- 1 1/2 Tbls freshly squeezed lemon juice
- 2 stalks celery (with leaves) peeled and sliced on the diagonal into 1/2 " thick pieces
- 1/2 C mayo
- 2 Tbls finely sliced fresh chives
- 2 Tbls sour cream
- 1 Tbl minced fresh flat leaf parsley
- 1 tsp sugar
- 3/4 tsp lemon zest
- fresh ground black pepper to taste
Cake, lemon raspberry

this recipe makes a beautiful 3 tiered wedding cake
- Frosting:
- 3 boxes (18.25 ounces each) lemon cake mix
- 3 3/4 cups grape juice
- 1 (1-ounce) bottle Champagne extract* or lemon
- 3 containers (12 ounces each) fluffy white or lemon frosting
- 1 jar raspberry jam
- 1 1/3 cups lemon curd, stirred to loosen
- Several bunches mini green grapes
- Powdered sugar
- Special Equipment:
- 1 (14-inch diameter) round cake pan with-3-inch high sides
- 1 (10-inch diameter) round cake pan with 3- inch high sides
- 1 (6-inch diameter) round cake pan with 3-inch high sides
- 3 cardboard cake rounds (1 (14-inch), 1 (10-inch) and 1 (6-inch))
- 3/8-inch diameter plastic dowel rods
- Parchment paper
Italian Hot Chocolate

Into a saucepan over LOW heat add chocolate and a smidge of milk
- 4 ounces bittersweet chocolate 70% or higher
- 1 1/2 cups whole milk
- 2 tablespoons sugar
- 2 teaspoons corn starch
Granola

Crispy, crunchy granola made the healthy way
- NOTE:
- 1 lb rolled oats
- 1 C shredded, coconut (sweetened or unsweetened)
- 1/2 C almonds, slivered
- 2 Tbls sesame seeds (optional)
- 1/2 C wheat germ
- 1/2 tsp coarse salt
- 1/2 C safflower oil
- 1/2 C honey
- 1/3 C water
- 1 1/2 tsp vanilla
- 1/2 C golden raisins
- 1/2 C dried cranberries, blueberries or other dried fruit, chopped
- I add 1/4 C unsalted sunflower seeds; 1/2 tsp cinnamon and 1/4 tsp fresh ground nutmeg for extra flavor.
