Chicken Satay Sammies

OMG,... these are so good, they're portable and travel well! Thanks Rachael!
- 1 1/2 pounds thin cut chicken breast meat (cutlets)
- 2 tablespoons vegetable oil
- Grill seasoning (recommended: Grill Mates Montreal Steak Seasoning by McCormick) or coarse salt and pepper
- 3 rounded tablespoons chunky peanut butter
- 3 tablespoons dark soy sauce, Tamari, eyeball it
- 1/4 cup apple juice, eyeball it
- 2 teaspoons hot sauce, eyeball it
- 1 lime, juiced
- 1/4 seedless cucumber, thinly sliced lengthwise then cut into sticks
- 1 cup shredded carrots
- 2 cups shredded lettuce, iceberg or hearts of romaine
- 4 crusty rolls, kaisers or subs, split
Meltaway Cookies

- 1 C butter
- 1/2 C sifted confectioners sugar
- 1 tsp vanilla
- 2 1/4 C cake flour
- 1/4 tsp salt
Baked Spaghetti

Great dish, quick, easy and soooooo good!
- 1 C chopped onion
- 1 C chopped green pepper
- 1 TBL butter
- 1 can (28 oz) diced tomatoes
- 1 can (2 1/4 oz)sliced black olives
- 2 tsp dried oregano
- 1 can(4 oz) mushroom stems and pieces - drained (optional)
- 1 lb ground meat browned and drained (I use beef)
- 2 C shredded cheddar cheese
- 1 can (10 3/4 oz) condensed cream of mushroom soup (undiluted)
- 1/4 C water
- 1/4 C parmesan cheese
- 1 box spaghetti cooked according to box directions
Beef Goulash

- 4 slices bacon, chopped
- 3 pounds boneless beef shank, trimmed and cut into 2-inch cubes
- Kosher salt and freshly ground black pepper
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 medium onions, chopped
- 3 garlic cloves, minced
- 2 roasted red bell peppers, peeled and sliced
- 3 tablespoons Hungarian sweet paprika
- 2 teaspoons caraway seeds, toasted and ground
- 2 tablespoons red wine vinegar
- 1 (15-ounce) can whole peeled tomatoes, hand crushed
- 6 cups low-sodium beef broth
- 4 russet potatoes, peeled and thickly sliced
- 1/2 cup sour cream
- Chopped flat-leaf parsley, for garnish

- 3 pkgs (3 oz) chicken flavored ramen
- 1 pkg (12 oz) broccoli slaw
- 1 Cup thinly sliced red onion
- 1 Cup frozen peas
- 3/4 Cup corn
- 1/2 Cup sugar
- 1/3 Cup vegetable oil
- 1/2 Cup apple cider vinegar
- 1 Cup roasted, salted sunflower seeds
Mississippi CrockPot Roast

- 1 package au jus gravy mix
- 1 package dry ranch dressing mix, such as Hidden Valley
- Pepperoncini peppers, number to your liking, and a little juice

- 1/2 lb ground beef
- 1/4 C onion, chopped
- 1 Tbl flour
- 1/4 C crimini mushrooms, sliced (optional)
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/8 tsp fresh ground black pepper
- 2 Tbls chili sauce
- 1/4 tsp Worcestershire sauce
- 1/3 C sour cream

- 20 1 inch cubes of cantaloupe or honey dew melon
- 20 thin slices of prosciutto
- 20 fresh mozzarella balls (or cubes)

Bread Pudding

- 8 slices of toasted bread (torn in pieces)
- 2 eggs
- 1 1/2 C sugar
- 2 C milk
- 1 Tbl cinnamon
- 2 Tbl melted butter
- 1 small can fruit cocktail (drained)
- 1 small bottle pure vanilla extract
- 2 small boxes of raisins
