Ingredients

  • Preheat oven to 350 degrees

    lb. sliced bacon diced

  • 1

    medium sweet onion chopped

  • 6

    large eggs lightly beaten

  • 4

    cups frozen hash browns shredded, thawed

  • 2

    cups cheddar cheese shredded

  • cups small curd cottage cheese

  • cups Swiss cheese shredded

  • 1

    lb. mild, bulk sausage

  • ½

    red bell pepper diced

  • ½

    green bell pepper diced

  • fresh, snipped chives for garnish

Directions

In a large skillet, cook bacon and onion until bacon is crisp; drain. In a separate skillet cook sausage and bell peppers. In a very large mixing bowl, combine the remaining ingredients; stir in bacon mixture and sausage mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting. NOTE: You can also make this ahead and refrigerate overnight before baking.
