Italian Cream Cake

In a large bowl, combine sugar, 1/2 cup butter, shortening and buttermilk
- 2 c. sugar
- 1 c. butter, softened and divided
- 1/2 c. shortening
- 1/2 c. buttermilk
- 2 c. all-purpose flour
- 1 t. baking soda
- 1/2 t. salt
- 5 eggs, separated
- 8 oz. pkg. cream cheese, softened
- 1 t. vanilla extract
- 1 lb. powdered sugar
- 2 c. chopped pecans, divided
- 2 c. sweetened flaked coconut
Walnut Rippled Coffee Cake

Set aside 2 tablespoons cake mix
- 1 package (18-1/4 ounces) yellow cake mix
- 1 cup (8 ounces) sour cream
- 4 eggs
- 1/3 cup canola oil
- 1/4 cup water
- 2 tablespoons sugar
- 1 cup chopped walnuts
- 2 tablespoons brown sugar
- 2 teaspoons ground cinnamon
Pretzel Dessert

In a large bowl, combine the pretzels, sugar and butter; set aside 1/2 cup for topping
- 2 cups crushed pretzels
- 3/4 cup sugar
- 3/4 cup butter, cubed
- 2 envelopes whipped topping mix (Dream Whip)
- 1 cup cold 2% milk
- 1 teaspoon vanilla extract
- 1 package (8 ounces) cream cheese, softened
- 1 cup confectioners' sugar
- 1 can (21 ounces) cherry pie filling
- Directions
- In a large bowl, combine the pretzels, sugar and butter; set aside 1/2 cup for topping. Press the remaining mixture into an ungreased 13-in. x 9-in. dish.
- In a large bowl, beat the whipped topping mix, milk and vanilla on high speed for 4 minutes or until soft peaks form. Add cream cheese and confectioners' sugar; beat until smooth.
- Spread half over crust. Top with pie filling and remaining cream cheese mixture. Sprinkle with reserved pretzel mixture. Refrigerate overnight. Yield: 16 servings.

- 1/2 cup butter, softened
- 2/3 cup packed brown sugar
- 2 egg yolks
- 1 teaspoon Spice Islands® pure vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 3 cups miniature marshmallows
- 2/3 cup corn syrup
- 1/4 cup butter, softened
- 1 package (10 ounces) peanut butter chips
- 2 teaspoons Spice Islands® pure vanilla extract
- 2 cups crisp rice cereal
- 1 cup salted peanuts
- 1 cup milk chocolate M&M's

- 1 1/2 cup butter
- 6 eggs
- 1 1/2 cup sugar
- 2 cups flour

Southwest Black Bean Soup

In a large nonstick saucepan, saute the pepper, celery and onion in oil until tender
- 1 medium sweet red pepper, chopped
- 2 celery ribs, chopped
- 1 small onion, chopped
- 1 tablespoon canola oil
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 can (4 ounces) chopped green chilies
- 3/4 teaspoon ground cumin
- 1-1/2 cups cooked instant brown rice
- 6 tablespoons reduced-fat sour cream
