Tomato Basil Salad

To make each salad, arrange 1/4 of of tomato slices on each plate and top with 1/4 of onions
- 2 large tomatoes
- 1/4 cup thinly sliced red onion
- 4 tsp olive oil
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/2 tsp fresh oregano, chopped (or 1/4 tsp dried)
- 20 leaves fresh basil
Bok Choy and Radishes

Cut off and discard root end of bok choy, leaving stalks with leaves
- 1 head bok choy
- 2 tablespoons butter
- 1 tablespoon olive oil
- 12 radishes, thinly sliced
- 1 shallot, sliced
- 1 teaspoon lemon-pepper seasoning
- 3/4 teaspoon salt
Cranberry Chip Cookies

In a large bowl, cream butter and sugar
- 1 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2-1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1-1/2 cups semisweet chocolate chips
- 1-1/2 cups dried cranberries
- 3/4 cup chopped pecans
- 1/2 cup English toffee bits or almond brickle chips, optional
Sausage Hash Brown Bake

In a large skillet, cook sausage over medium heat until no longer pink; drain on paper towels
- 2 pounds bulk pork sausage
- 2 cups (8 ounces) shredded cheddar cheese, divided
- 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 1 cup (8 ounces) sour cream
- 1 carton (8 ounces) French onion dip
- 1 cup chopped onion
- 1/4 cup chopped green pepper
- 1/4 cup chopped sweet red pepper
- 1/8 teaspoon pepper
- 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
Catalina Chicken

In a large nonstick skillet, brown chicken in oil
- 2 boneless skinless chicken breast halves (5 ounces each)
- 2 teaspoons canola oil
- 1/4 cup Catalina salad dressing
- 4-1/2 teaspoons onion soup mix
- 1 tablespoon grape jelly
Cocoa Marshmallow Cookies

In a large bowl, cream butter and shortening until light and fluffy
- Frosting:
- 1 cup sugar
- 1/2 cup shortening
- 1 egg
- 1/4 cup 2% milk
- 1-3/4 cups plain flour
- 1/2 cup baking cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 12 large marshmallows, halved
- 2 cups powdered sugar
- 2 tbsp. baking cocoa
- 1 tbsp. butter, softened
- 3 -4 tbsp. milk
Skillet Beef and Potatoes

- 3 medium potatoes, halved and cut into 1/4-inch slices

- 1/2 teaspoon salt

- 1/2 cup chopped onion
