Crock Pot Chicken Cacciatore

Quick method: Season chicken with salt and black pepper and place in the slow cooker
- 8 chicken thighs, with the bone, skin removed
- 28 oz can crushed tomatoes
- 1/2 red bell pepper, sliced into strips
- 1/2 green bell pepper, sliced into strips
- 1/2 large onion, sliced
- 1 tsp dried oregano
- 1 bay leaf
- salt and fresh pepper to taste
- 1/4 cup fresh herbs such as basil or parsley for topping
Bacon Stir-Fry Breakfast

Cook chopped bacon in a medium skillet over medium-low heat
- 8 bacon slices, diced
- 1/2 yellow onion, diced
- 1 medium sweet potato, diced
- 1 medium zucchini, diced
- 7-8 green beans
- 1 avocado
- Freshly ground black pepper, to taste
Grilled Steak & Gorgonzola Pizza w/Balsamic Glaze

1. Preheat oven to 425 degrees
- Steak
- 10 oz. New York strip steak
- Marinade, see below (optional but highly recommended; it was delicious)
- 2 T. Olive oil
- Pizza
- 1/2 lb. pizza dough
- Flour (and cornmeal if available), for work surface
- Olive oil, for brushing crust
- 1/2 cup shredded Fontina cheese
- 1/2 cup shaved Parmesan cheese
- 1/2 - 3/4 cup Gorgonzola (I used closer to 3/4, but I love bleu cheese)
- Handful of arugula
- Balsamic Reduction
- 1 cup balsamic vinegar
- 1 T. honey
- 1/4 t. black pepper
Bang Bang Shrimp

Mix mayo and sauces for coating
- 1 lb shrimp, shelled and deveined smaller shrimp works best
- 1/2 cup mayonnaise
- 1/4 cup Thai sweet chili sauce
- 3 - 5 drops hot chili sauce, just a few drops (I use Siracha
- 1/2-3/4 cup cornstarch, to coat the shrimp in
GREEN LIGHTNING SHRIMP

Thread the shrimp onto 2 parallel skewers, using 2 skewers for each kebab
- 1 lb jumbo shrimp, peeled and deveined
- 1 bunch cilantro, rinsed and coarsely chopped (about 1 cup)
- 4 jalapeno peppers, seeded and coarsely chopped (for hotter shrimp, leave the seeds in)
- 1 bunch green onions, chopped
- 1 tsp freshly ground black pepper
- 1 tsp ground cumin
- 1/2 cup olive oil
- juice of 2 limes
- 3 cloves garlic, chopped
- metal or bamboo skewers (2 for each shrimp)
- 2 additional limes, cut into wedges
OMELET MUFFINS

2 Muffins is one serving
- coconut oil or paper muffin liners
- 8 eggs
- 1/8 cup water
- 1/2 lb chicken, ham, or sausage, cooked and cut or crumbled into small pieces
- 2 cups diced vegetables (1 red bell pepper, 1/4 lb asparagus or broccoli and 1/2 yellow onion recommended, but use whatever is on hand)
- 1/4 tsp salt
- 1/8 tsp ground pepper
Spinach Pizza Crust

Directions Preheat oven to 425
- Ingredients
- Crust
- 2 cups raw spinach leaves
- 1 egg (large)
- 1 cup shredded Kraft Italiano cheese blend
- spices (I used salt, pepper, and seasoning salt - a sprinkle of each)
- Pizza Sauce
- 24 grape tomatoes
- 2 cloves garlic
- Toppings
- 2 rounds of Canadian bacon, diced
- 1/4 cup onion, diced
- 1/4 cup Parmesan cheese, shredded
BAKED EGGS IN BACON RINGS

Preheat oven to 325℉. Cook bacon in a skillet over medium heat until it begins to shrivel (about 3 minutes)
- 6 strips nitrite/nitrate free bacon
- melted bacon fat for brushing tins
- 4 eggs
- 1 small to medium tomato, cut into 4 (1/2 inch) slices
- 1/3 cup onions, chopped
- 3-4 white button mushrooms, chopped
- 1/2 tsp freshly ground black pepper
SHRIMP CAKES

Place shrimp in food processor, pulse until finely chopped
- 1 pound (raw) shrimp, peeled and deveined
- 1 red or yellow bell pepper, finely chopped
- 1 clove garlic, minced
- 2 Tbs green onions (scallions), thinly sliced
- 1 Tbs lime juice, freshly squeezed
- 1 Tbs raw honey
- 1/2 tsp sea salt (optional)
- 1/4 tsp ground chipotle
- 1 egg
- 1/2 cup cilantro, finely chopped
- 1/2 cup almond flour
- 3 Tbs coconut oil, for sautéing
