EASY PORK LOIN CHOPS

Preheat oven to 425℉. In a small bowl, mix the salt (optional), pepper, paprika, sage and thyme together
- 1/2 tsp sea salt (optional)
- 1/4 tsp freshly ground black pepper
- 1/4 tsp paprika
- 1/4 tsp dried sage
- 1/4 tsp dried thyme
- 4 boneless pork loin chops
- 1 Tbs lard (coconut oil may be used, but be careful it doesn't burn)
- 1 onion, sliced thin
GRILLED PLANTAIN AND APPLE SUNDAES

1. Preheat grill to medium direct heat
- 2 ripe medium plantains, peeled and coarsely chopped
- 1 apple, peeled, cored and chopped
- 2 tbsp. packed brown sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 tbsp. water or apple juice
- 1 tbsp. butter or margarine
Pretzel Salad

1. preheat oven to 400 degrees f 200 degrees c
- 2 cup crushed pretzels
- 3/4 cup margarine, melted
- 2 teaspoon white sugar
- 1 8 ounce package cream cheese
- 3/4 cup white sugar
- 4 1/2 ounce frozen whipped topping, thawed
- 1 6 ounce package strawberry flavored gelatin
- 2 cup boiling water
- 2 10 ounce packages frozen strawberries
Basic Crepes

Directions In a large mixing bowl, whisk together the flour and the eggs
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
GREEN SMOOTHIE

Quarter apple and pear, remove stems and seeds and put in blender
- 1 apple
- 1 pear
- 1/2 tsp freshly grated ginger
- 2 Tbs flax seeds
- 6 large kale leaves (take out woody stems), or 2 handfuls of spinach
- juice of 1 small lemon
- 1 cup water
CHICKEN STIR-FRY BREAKFAST

In a small bowl, beat eggs and water together
- 2 eggs
- 1 Tbs water
- 1 tsp coconut oil, lard, or tallow
- 1/4 lb asparagus, washed and cut into 1-2" pieces
- 1 red bell pepper, sliced
- 1 clove garlic, minced
- 1/2 lb cooked, diced chicken breast
- 1/2 cup sliced olives (optional, Castelveltrano recommended)
- sea salt, to taste (optional)
- 1/4 cup slivered almonds
- 1/2 avocado, sliced
Filipino Adobo Chicken

-Marinate chicken in vinegar, soy sauce, garlic, jalapeño and pepper, for at least an hour (overnight is ideal)
- 8 chicken legs on the bone (skin removed)
- 1/3 cup low sodium soy sauce
- 1/3 cup apple cider vinegar
- 1 small head of garlic, crushed
- 6 ground peppercorns
- 4 bay leaves
- 1 jalapeño, chopped (optional)
Sesame Crusted Chicken w/Pineapple Salsa

1. Combine all ingredients under Pineapple Salsa, cover and chill for 30 minutes
- Chicken Ingredients:
- ½ cup lightly toasted sesame seeds
- 2 tbsp minced fresh ginger
- 2 tsp vegetable oil
- 4 (4 ounce) boneless chicken breasts
- ½ tsp salt
- Pineapple Salsa Ingredients:
- 15 oz can of pineapple tidbits
- ½ cup chopped red pepper
- 1 tsp fresh grated ginger
- 1 tbsp fresh lime juice
- Pinch of ground cloves
- ½ c. chopped cilantro
- ¼ tsp hot sauce
Chicken with Balsamic Pears

Melt some cooking fat in a skillet over medium-high heat
- 4 chicken breasts, boneless, skinless;
- 1 yellow onion, sliced;
- 2 garlic cloves, minced;
- 1/3 cup balsamic vinegar;
- 2 to 3 pears, sliced;
- 2 cups diced tomatoes;
- 4 tbsp. fresh basil, sliced;
- Cooking fat;
- Sea salt and freshly ground black pepper;
Coleslaw

In a large bowl, mix together the dressing ingredients
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- Drizzle extra-virgin olive oil
- 1/2 lemon, juiced
- Salt and freshly ground black pepper
- 1 tablespoon red wine vinegar
- 1 tablespoon sugar or pinch
- 1 store-bought bag shredded slaw mix (containing red and green cabbage and carrots)
