Orange Mojito Chicken

- Ingredients:
- 1 (2½ to 3-pound) chicken
- 2 tbsp garlic powder
- 1 tbsp onion powder
- ¼ tsp ground cumin
- 1 tbsp dried oregano
- 2 tbsp kosher salt
- 1 tbsp freshly ground black pepper
- 1 tsp paprika
- 4 tbsp extra-virgin olive oil
- Marinade (see recipe below)
- Mojito Glaze (see recipe below)
- Marinade:
- 1 cup orange juice
- 2 limes, juiced
- ¼ cup white wine vinegar
- ¼ cup extra-virgin olive oil
- 1 tbsp sliced garlic
- ¼ cup dark rum
- --Combine all the ingredients in a mixing bowl.
- Mojito Glaze:
- ½ cup dark rum
- ½ cup chicken broth
- 1 tbsp brown sugar
- 3 tbsp cold water
- 1 tbsp cornstarch
- ¼ cup mint leaves, chopped
- Salt and freshly ground black pepper
Neapolitan Meatballs

Place bulgur in a medium bowl and cover generously with hot water

- 2 tablespoons extra-virgin olive oil, divided
- 8 cloves garlic, very thinly sliced
- 3/4 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper
- 2 28-ounce cans diced tomatoes
- 4 cups diced plum tomatoes, (about 1 1/2 pounds)
- 2 cups cubed whole-wheat country bread
- 1 large egg
- 1 large egg white
- 1 pound ground turkey
- 1/2 cup finely shredded Parmesan cheese
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon freshly ground pepper, plus more to taste
- 1/8 teaspoon salt
- 1/2 teaspoon sugar, (optional)
Low Fat Creamy Blue Cheese Dressing

In a small bowl, mash blue cheese and yogurt together with a fork
- 1/2 cup crumbled blue cheese
- 6 oz fat free Greek yogurt
- 1 tbsp light mayonnaise
- 1 tbsp lemon juice
- 1 tbsp white wine vinegar
- 1/8 teaspoon garlic powder
- salt and freshly ground black pepper
SCRAMBLED EGGS WITH BACON AND VEGETABLES

Cook bacon, remove from pan and reserve 1 Tbs of the bacon drippings in the pan
- 4 bacon slices
- 4 eggs
- 1 medium zucchini, diced
- 1 clove garlic, minced
- 1 medium tomato, diced
- 1 handful spinach
FRIED EGGS WITH SWEET POTATO HASH

In a large skillet, heat 2 teaspoons coconut oil over medium heat
- 1 Tbs coconut oil, divided
- 1 medium sweet potato or yam, diced into 1/2" cubes
- 1/2 yellow onion, diced
- 2 nitrite/nitrate free sausages, sliced
- 1 medium bell pepper, diced
- 4 eggs
- freshly ground black pepper
Salsa Verde Turkey Burger

Scoop the avocado flesh into a small bowl
- 1 avocado, halved and pitted
- 1/2 cup mayonnaise
- 1 clove garlic, finely chopped
- Salt
- 1 pound ground turkey thigh meat
- 1/2 cup salsa verde
- 4 slices pepper Jack cheese (about 4 ounces)
- 4 kaiser rolls, split
- 1 cup fresh cilantro leaves, coarsely chopped
- 2 small green or red tomatoes, sliced
Kalbi BBQ Ribs Hawaiian Style

- 5 lbs Thin cut tender short rib of beef, cross cut, about 1/2" thick
- 1 3/4 C Soy Sauce
- 1/4 C Fish Sauce
- 2 C White sugar
- 4 Garlic cloves
- 1 inch Ginger, grated
- 1 tsp Toasted Sesame Oil
- 1/4 tsp Red Pepper Flakes

- 1 C Ketchup
- 1/2 C Cider Vinegar
- 1/4 C Water
- 1/4 C White Grape Juice
- 1/2 C Brown Sugar
- 1/2 C White Sugar
- 1/4 C Maple Syrup
- 1/4 C Honey
- 1 Tbsp Chili Powder
- 1 Tbsp Cumin
- 1 Tbsp Garlic Powder
- 1 Tbsp Paprika
- 1 Tbsp Cajun Seasoning
- 2 Tsp Sweet & Smoky
- 1 Tsp Liquid Smoke
CHOCOLATE CHIP OATMEAL COOKIE PANCAKES

Preheat a skillet to medium heat or about 300-325 degrees
- 1 very ripe medium banana
- 1 teaspoon baking powder
- 1 flax egg (1 Tbsp flaxseed meal + 2.5 Tbsp water)
- pinch salt
- 1/2 teaspoon vanilla extract
- 1 Tablespoon almond butter
- 1 Tablespoon canola oil (or coconut oil)
- 3 Tablespoons almond milk (or sub other milk)
- 1/2 cup rolled oats (or gluten free oats)
- 1/4 cup whole wheat or unbleached flour (or sub other flour)
- 3 Tablespoons semisweet chocolate chips (non-dairy for vegan)
