BLT BREAKFAST

Cook bacon in a large skillet over medium-low heat, stirring frequently until fully cooked (about 15 minutes)
- 6 bacon slices, diced
- 2 cups baby spinach
- 1 cup cherry tomatoes, halved (or use 1 medium tomato, chopped)
- 4 large eggs
- 1 avocado, diced
- 2 Tbs slivered almonds
Honey Walnut Shrimp

Heat vegetable oil in a large skillet over medium high heat
- 1 cup vegetable oil
- 1/2 cup sugar
- 1/2 cup walnut halves
- 3 tablespoons mayonnaise
- 1 1/2 teaspoons honey
- 1 1/2 teaspoons condensed milk
- 1 pound medium shrimp, peeled and deveined
- Kosher salt and freshly ground black pepper, to taste
- 1 large egg, beaten
- 1/2 cup cornstarch
Braised Short Ribs

In a large skillet, heat the oil
- 2 tablespoons canola oil
- 6 flanken-style short ribs with bones, cut 2 inches thick (about 4 pounds);
- Kosher salt and freshly ground pepper
- 1 large onion, finely chopped
- 2 carrots, sliced
- 3 celery ribs, sliced
- 3 garlic cloves, thickly sliced
- One 750-milliliter bottle dry red wine, such as Cabernet Sauvignon
- 4 thyme sprigs
- 3 cups chicken stock
Almost Oatmeal

Combine all ingredients in a small pan over medium heat, stirring often until all is thoroughly combined and warm
- 1-1/2 cups unsweetened applesauce
- 4 Tbs raw, chunky almond butter
- 2-3 Tbs raw, unsweetened canned coconut milk

- dash of fresh grated nutmeg (optional)
Turkey Noodle Soup

Directions In a large saucepan, bring the broth, water, carrots, onion and celery to a boil
- 2 (14.5 ounce) cans chicken broth
- 3 cups water
- 1 3/4 cups sliced carrots
- 1/2 cup chopped onion
- 2 celery ribs, sliced
- 1 (12 ounce) package frozen egg noodles
- 3 cups chopped cooked turkey
- 1 (10 ounce) package frozen peas
- 2 (1 ounce) packages instant chicken gravy mix
- 1/2 cup cold water
Tomato-Basil Soup

Bring tomato and juice to a boil in a large saucepan
- 4 cups chopped seeded peeled tomato (about 4 large)
- 4 cups low-sodium tomato juice
- 1/3 cup fresh basil leaves
- 1 cup 1% low-fat milk
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1/2 cup (4 ounces) 1/3-less-fat cream cheese, softened
- Basil leaves, thinly sliced (optional)
- 8 (1/2-inch-thick) slices diagonally cut French bread baguette
Peanut Chicken Stir-Fry Recipe

In a small bowl, combine 1/2 cup water, peanut butter, soy sauce and brown sugar until smooth; set aside
- 1/2 cup plus 1 tablespoon water, divided
- 1/4 cup peanut butter
- 3 tablespoons fish sauce
- 1 tablespoon brown sugar
- 3 garlic cloves, minced
- 1 tablespoon vegetable oil
- 1 pound boneless skinless chicken breasts, cubed
- 3 cups fresh broccoli florets
- 1 tablespoon cornstarch
- 1 teaspoon Siracha
- Hot cooked rice or noodles
Spanish Style Quinoa

- 2 tablespoons vegetable oil
- 1 cup uncooked quinoa
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 small green bell pepper, chopped
- 1 (8 ounce) can tomato sauce
- 2 1/2 cups water
- 1 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
