Garlic Lover's Chicken

Directions In a large resealable plastic bag, combine the first five ingredients
- 1/2 cup dry bread crumbs
- 1/3 cup grated Parmesan cheese
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon salt (optional)
- 1/8 teaspoon pepper
- 1/4 cup milk
- 6 boneless, skinless chicken breast halves
- 1/4 cup butter or margarine, melted
- 1 garlic clove, minced
- 2 tablespoons lemon juice
- Paprika
Armadillo Eggs

1. Preheat smoker to 275 degrees 2
- 12 Jalapeno peppers
- 1 Lb ground Italian Sausage
- 2 C All-purpose baking mix (Bisquick)
- 1 Lb Cheddar cheese, shredded
- 1 Dash Cayenne pepper
- 1 Tbsp minced garlic
- 1/2 Lb Pepper-jack cheese, cubed
- 1 Oz Bacon, crisply cooked and Finely chopped
BREAKFAST SMOOTHIE

Fill a blender with the frozen berries and quickly pulse with a little hot water to break them up
- 2 cups frozen berries
- 2/3 cup unsweetened shredded coconut
- 1 cup almond milk (canned coconut if you want more calories/fat)
- 1-2 eggs (safest if from pastured chickens)
Homemade Croutons

Preheat oven to 300. Line a baking sheet with a silicone baking mat
- 1/2 cup olive oil
- 4 cloves garlic, finely minced
- 1 (8 ounce) loaf French bread baguette, cut into 1/2-inch cubes
- 3/4 cup finely grated Parmigiano-Reggiano cheese, divided
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 1 pinch cayenne pepper
CUT Mac ’n’ Cheese

Preheat an oven to 375°F
- 6 Tbs. (3/4 stick) unsalted butter, plus more for greasing
- 6 Tbs. all-purpose flour
- 1 bay leaf
- 4 cups milk
- 1 1/4 cups crème fraîche
- 1 1/2 tsp. fleur de sel, plus more, to taste
- 3 3/4 cups shredded mozzarella cheese
- 1 3/4 cups shredded aged cheddar cheese
- Freshly ground white pepper, to taste
- 1 lb. cavatappi, cooked al dente, cooled in ice water and drained
- 3/4 cup fresh brioche bread crumbs
Lemon Cake

Directions Preheat oven to 350 degrees F (175 degrees C)
- 1 (18.25 ounce) package yellow cake mix
- 1 (3.4 ounce) package instant lemon pudding mix
- 1 3/4 cups water
- 3 egg whites
- 3/4 cup nonfat milk
- 1/2 teaspoon lemon extract
- 1 (1 ounce) package instant sugar-free vanilla pudding mix
- 1 (8 ounce) container frozen light whipped topping, thawed
GRILLED FLANK STEAK WITH PINEAPPLE SALSA

Prepare the grill, or turn the broiler on high
- 1 lb beef flank steak
- 1 Tbs olive oil
- 1 tsp chipotle powder
- 4 slices fresh pineapple (canned in juice may be used)
- 1 large red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- juice of 1 lime
Mama J's Bruschetta

-Mix cream cheese, basil (6-8 leaves), and dressing in food processor until smooth
- 6 Roma Tomatoes
- 2 cloves garlic - minced
- 1 Tbsp EVOO
- 1 Tsp Basalmic
- 12-15 Fresh Basil leaves - chopped
- 1/3 C. Italian Vinaigrette dressing
- 1/3 C. shredded Parmesan
- 1 8oz pkg cream cheese
- 1 loaf baguette bread - sliced thin
Easy Avocado Pasta

1) Bring a large pot of salted water to the boil then cook pasta according to package directions
- 8 ounces pasta
- 1 cup avocado, about 1 large or 1 1/2 small avocados
- 1/4 teaspoon finely grated garlic
- 1 teaspoon lemon juice
- 1/8 teaspoon salt
- freshly ground black pepper
- 1 medium tomato
- 1 green onion, finely chopped
BUN-LESS BURGERS

Mix meat, sea salt and freshly ground black pepper together with a fork
- 1 lb lean ground beef or turkey
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1 tsp coconut oil
