- 1 (16 ounce) package powdered sugar
- 1 cup thawed COOL WHIP Whipped Topping
- 1 (1 ounce) square BAKER'S White Chocolate, shaved into curls

Sweet Potato Burrito Smothered in Avocado Salsa Verde

Preheat the oven to 450 degrees Fahrenheit
- BURRITOS
- 2 medium sweet potatoes
- 1 1/2 to 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked hot paprika (or chipotle powder)
- 1/4 teaspoon cayenne
- sea salt and black pepper
- 4 to 6 whole wheat tortillas
- 2 roasted red peppers (I used jarred)
- 2 cups cooked black beans or 1 can black beans, rinsed and drained
- 1 + cup shredded Jack cheese
- SALSA VERDE
- 2 ripe avocados from Mexico
- 1 cup mild salsa verde, jarred
- 2 garlic cloves, roughly chopped
- 1 to 2 teaspoons fresh jalapeño, deseeded and roughly chopped (optional)
- 1 lime, juiced
- 1/4 cup packed cilantro leaves
- up to 2 tablespoons water, to thin as necessary
- sea salt, to taste (optional)
- TOPPINGS
- 1 1/2 cups chopped romaine lettuce
- 1 small red onion, finely chopped
- finely chopped jalapeño (optional)
- sour cream
Mango Glaze

Combine sugar and vinegar in a small sauce pan and cook over high heat until the sugar is melted
- 1 cup Sugar
- 1 cup Red Wine Vinegar
- 1 ripe Mango, pealed, pitted and coarsely chopped
- 1 TBS Honey
- Salt and Pepper to taste
Brisket Rub

- 1/3 C Brown Sugar
- 1/3 C White Sugar
- 3 Tbsp Salt
- 2 Tbsp Garlic Powder
- 2 Tbsp Onion Powder
- 2 Tbsp Paprika
- 1 Tbsp Basil
- 1 Tbsp Cajun Seasoning
- 1 Tsp White Pepper
Chicken Seasoning

Mix all together and sprinkle on chicken
- 2 Tbsp Salt
- 1 Tbsp Garlic powder
- 2 Tsp Ground black pepper
- 1 Tsp Sweet & Smoky blend
- 1/2 ½ Tsp Cajun seasoning
Mango Salsa

Mix all together and let sit in the refrigerator for one hour to mix flavors
- 2 mangos (peeled and diced)
- 1/2 red onion, diced
- 1 cucumber, peeled and diced
- 1 jalepeno, seeded and finely chopped
- 1 lime, juiced
- 1/2 tsp lime zest
- 1 Tbsp cilantro leaves, finely chopped
- salt and pepper to taste
ROASTED PEPPER AND SAUSAGE OMELET

Put pepper in a heavy bottomed pan over high heat
- poblano, green chili or bell pepper
- 4 eggs
- 1 tsp freshly ground black pepper
- 2 tsp coconut oil
- 1/2 lb nitrite/nitrate free beef or pork sausage links, cooked and sliced
