Broiled Tilapia Parmesan

Directions Preheat your oven's broiler
- 1/2 cup Parmesan cheese
- 1/4 cup butter, softened
- 3 tablespoons mayonnaise
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon onion powder
- 1/8 teaspoon celery salt
- 2 pounds tilapia fillets
The Simplest Tomato Sauce

Heat the tomatoes, onion and butter in a heavy saucepan over medium heat
- 1 (28 ounce) can whole peeled tomatoes, with juices
- 1 yellow onion, peeled and halved
- 5 Tablespoons unsalted butter
- Salt, to taste (optional)
- Parmesan cheese (optional)
Naked Turkey Bruschetta Burgers

Combine the red onion, olive oil, balsamic, salt and pepper in a large bowl
- For the turkey zucchini burgers:
- 1/4 cup chopped red onion
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- kosher salt and fresh cracked pepper to taste
- 3 medium vine ripe tomatoes
- 2 small cloves garlic, minced
- 2 tbsp fresh basil leaves, chopped
- 3 oz part skim mozzarella, diced
- 1.25 lbs 93% lean ground turkey
- 1 small zucchini, grated (1 cup, or 5 oz)
- 1/4 cup seasoned whole wheat breadcrumbs
- 1 clove garlic, grated
- 1 tbsp red onion, grated
- salt and fresh pepper
- oil spray
- For serving:
- 2 medium tomatoes, sliced into 10 thin slices
- 4 loose cups baby arugula
Shrimp Bruschetta

1. Preheat oven to 350. Mix shrimp, Old Bay, garlic, tomato, onion, olive oil and egg until well blended
- 1 lb cooked shrimp--finely chopped
- 2 tsp Old Bay
- 1/4 tsp garlic powder
- 1 plum tomato--finely chopped
- 2 TBSP green onion--finely chopped
- 2 tsp olive oil
- 1 egg white
- 1 loaf French bread
- 2 TBSP mayo
Baked Apple Cider Donut Holes

Preheat oven to 400 degrees and spray a mini muffin pan with cooking spray
- 2 cups flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 teaspoons cinnamon
- 1 large egg
- 2/3 cup brown sugar
- 1/2 cup apple butter
- 1 tsp vanilla extract
- 1/3 cup honey
- 1/3 cup apple cider
- 1/3 cup plain yogurt (I used plain nonfat Greek yogurt)
- 2 Tbsp canola oil
- canola cooking spray
- 2 Tbsp unsalted butter
- 1/4 cup sugar
- 1 Tbsp cinnamon
Penne with Roasted Tomatoes and Mozzarella

A light, fresh pasta dish with fresh mozzarella and flavorful roasted cherry tomatoes
- 1 1/2 pints cherry or grape tomatoes
- 2 Tbsp olive oil
- 2 cloves of garlic, thinly sliced
- Salt
- Pepper
- 1 13.25 oz box of penne
- 6 oz fresh mozzarella, cut into small cubes (or a container of mozzarella pearls, drained)
- 1/4 cup chopped fresh basil
Skinny Coconut Shrimp

Preheat oven to 425°. Spray a non-stick baking sheet with cooking spray
- For the Sweet and Spicy Dipping Sauce:
- 1 lb (24) large shrimp, peeled and deviened (weight after peeled)
- 1/2 cup + 1 tbsp shredded sweetened coconut
- 1/2 cup + 1 tbsp panko crumbs
- 2 tbsp all purpose flour (you will only use 1 tbsp)
- 1 large egg
- pinch salt
- non-stick spray (I used my misto)
- 1/2 cup apricot preserves (you can use sugar free if you wish)

- 4 cups breadcrumbs
- 1 cup grated Parmesan (about 2 ounces)

- 1 cup all-purpose flour
- 4 large eggs
- 6 tablespoons vegetable oil

- 2 tablespoons prepared Dijon-style mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped garlic
- 1 tablespoon chopped fresh parsley
- 2 pounds medium raw shrimp, shelled, deveined, with tails attached
