Baked Chicken and Spinach Pasta

Preheat the oven to 350°
- 1 lb. pasta (I used whole wheat shells)
- 4 boneless, skinless chicken breasts (about 2 lbs.), diced
- 1/4 cup olive oil
- 8 cloves garlic, minced
- 1 tsp. salt
- 5 cups fresh spinach, chopped
- 1/4 cup white wine
- 2 cups mozzarella cheese
Baked Chicken Parmesan

Preheat oven to 450°. Spray a large baking sheet lightly with spray
- 4 (about 8 oz each) chicken breast, fat trimmed, sliced in half to make 8
- 3/4 cup seasoned breadcrumbs (I used whole wheat)
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter, melted (or olive oil)
- 3/4 cup reduced fat mozzarella cheese (I used Polly-o)
- 1 cup marinara or Filetto di Pomodoro

1. Start to boil sauce in large pot
- 1 lb ground beef
- 3/4 cup bread crumbs
- 1/2 cup grated parmesan cheese
- 1/2 tsp minced garlic
- 1/4 cup milk
- 2 eggs
- 2 jars Classico sauce

- pizza dough (enough for 1 pizza)
- 4 oz. mozzarella cheese, cubed (about 20-24 pieces)
- Sliced pepperoni

Slow Cooker Chicken Taco Soup

1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker
- 1 onion, chopped
- 1 (16 ounce) can chili beans
- 1 (15 ounce) can black beans
- 1 (15 ounce) can whole kernel corn, drained
- 1 (8 ounce) can tomato sauce
- 1 (12 fluid ounce) can or bottle beer
- 2 (10 ounce) cans diced tomatoes with green chilies, undrained
- 1 (1.25 ounce) package taco seasoning
- 3 whole skinless, boneless chicken breasts shredded Cheddar cheese (optional)
- sour cream (optional)
- crushed tortilla chips (optional)
Blueberry Pancakes

If you can’t get fresh blueberries, frozen ones will work
- 1 tablespoon lemon juice
- 2 cups milk (or 2 cups buttermilk in place of the milk and lemon juice)
- 2 cups unbleached all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon table salt
- 1 large egg
- 3 tablespoons unsalted butter, melted and cooled slightly
- 2 teaspoons vegetable oil
- 1 cup fresh or frozen blueberries, rinsed and dried
Peppermint Sugar Cookies

This is a nice, crispy cookie
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 3/4 cup powdered sugar
- 1 large egg yolk
- 2 large egg whites
- 1/2 teaspoon peppermint extract
- 1/2 cup finely crushed hard peppermint candies or candy canes (about 3-ounces)
- additional powdered sugar for rolling

- 2 tablespoons butter
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 1 onion, finely diced
- 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

- 1 1/2 cups mashed, very ripe bananas (about 4)
- 1/2 cup sugar
- 1/4 cup firmly packed light brown sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 1/4 cup whole milk
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon instant espresso powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup (6 ounces) semisweet chocolate chips
Corn Cakes

Heat 1 teaspoon oil in a large nonstick skillet set over medium heat
- 1 tablespoon plus 1 teaspoon extra-virgin olive oil
- 1 1/2 cups corn kernels (from 2 ears corn)
- 1/2 cup diced zucchini (about half of a small zucchini)
- Coarse salt and freshly ground pepper
- 1 green onion, very thinly sliced
- 1 egg, lightly beaten
- 2 tablespoons cornmeal
- Goat cheese, crumbled, for serving
