Combine the strawberries and sugar in a small bowl; toss to combine
- 1 cup strawberries, hulled and diced
- 1 tbsp. sugar
- 1 French baguette, sliced on a bias
- 4 oz. goat cheese
- 1 tbsp. olive oil
- 2 tsp. balsamic vinegar
- 1/4 cup minced basil leaves
- Freshly ground black pepper
Honey Roasted Red Potatos

1. Preheat oven to 375 degrees F (190 degrees C)
- 1 pound red potatoes, quartered
- 2 tablespoons diced onion
- 2 tablespoons butter, melted
- 1 tablespoon honey
- 1 teaspoon dry mustard
- 1 pinch salt
- 1 pinch ground black pepper
Downeast Maine Pumpkin Bread

1. Preheat oven to 350 degrees F (175 degrees C)
- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 1 cup vegetable oil (sub--1/2 c veg oil, 1/2 c applesauce)
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
Lighter Eggplant Parmesan

Start by making the sauce if you don't have any already made
- 1 large eggplant (2 lbs)
- 1 tbsp olive oil
- 12 oz fat free ricotta
- 1/4 cup + 2 tbsp Pecorino Romano
- 1/4 cup fresh parsley, chopped
- 1 medium egg
- 2 cups reduced fat mozzarella (I used Sargento)
- 3 cups homemade tomato sauce
- salt
Shaved Asparagus Pizza

Preheat the oven and a pizza stone at 500˚ F for at least 30 minutes
- Pizza dough
- Olive oil, for brushing
- 8 oz. asparagus spears
- 4 oz. fresh mozzarella, thinly sliced
- 3 oz. spreadable garlic herb cheese, such as Boursin or Trader’s Point Creamery garden herb fromage blanc
- Kosher salt and freshly ground pepper
White Chocolate Gingerbread Cookies

In a large bowl, mix shortening brown sugar, egg and molasses until creamy
- 1 cup shortening
- 1 1/2 cups packed brown sugar
- 1 egg
- 1/3 cup molasses
- 2 1/2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon ground cloves
- 1 package white chocolate chips
Cheesy Vegetable Chowder

Melt the butter in a large soup pot
- 2 Tablespoons butter
- 1/2 cup chopped onion
- 1 cup finely chopped carrot
- 1 stalk celery, finely chopped (feel free to add more celery if you like celery; I don't, so I don't add much)
- 1 Tablespoon minced garlic
- 4 cups chicken broth (I usually use a mixture of low-sodium chicken broth and broth made with chicken soup base because it gives it such nice flavor)
- 2 large baking potatoes, peeled and chopped
- 1 Tablespoon flour
- 1/2 cup water
- 2/3 cup milk
- 2 cups chopped broccoli
- 2 heaping cups shredded cheddar cheese
Slow Cooker Pulled Pork

Place pork in the slow cooker and season with salt, vinegar, garlic powder and liquid smoke
- 2.5 lb boneless pork loin roast (center cut, trimmed of all fat)
- 2 tsp red wine vinegar
- 2 tsp Hickory liquid smoke
- 1 tsp garlic powder
- 1 tsp sea salt
- 1 cup Homemade Kansas City BBQ Sauce
Veggie Shrimp Fettuccine

Directions Cook fettuccine according to package directions
- 4 ounces uncooked fettuccine
- 1 medium onion, chopped
- 1 medium zucchini, cut into 1/4-inch slices
- 1 medium tomato, seeded and chopped
- 1 garlic clove, minced
- 2 tablespoons butter
- 1/2 pound uncooked medium shrimp, peeled and deveined
- 2 tablespoons white wine or chicken broth
- 1/4 teaspoon salt
